I have couple of packets of appam mix{Melam brand} from home, but i couldn't find a recipe in the back.So i use the mix for making puttu.I have seen my MIL
making appam batter (with appam mix) , she says she puts 'kappikachi', but i think tat's a tedious method. Is there any fool proof recipes tat u know to make the batter using appam mix?I know my question is quite lame, please pour in u'r suggestions pals.

I have made appam with the mix (which I've bought at the Indian store in the US--I'm afraid I don't remember the brand tho'). What I do is add one can of coconut milk, about a tbsp of yeast, and three tbsps of sugar. Mix everything and add some warm water to the mix (to get a dosa batter like consistency). I leave the batter out overnight, and then make the appam. I have an electric stove top, so the appam-chatti (pan/kadhai) doesn't work very well. Therefore I usually make the appam in a normal sautee' pan.

ya that method also works i thing....actually it is very easy to make "kappi"...
take a 2tsp of flour...add a cup of water...heat it in stove....add it to the flour...ad coconut milk,salt,sugar(optional),yeast .

to avoid addind yeast ...add old dosa batter....keep it over night..

Thanks Shini for the feedback.

I tried making the batter (using a differnt brand) by adding 1 can coconut milk + 4 spoons of sugar + 1/2 spoon of salt + there was a small rava packet(i cooked that in lil bit of water ) mixed everything together and kept it overnight and used it.

Result : It looked and tasted ok, though it smelled a bit different(from the usual).
