vegi kothu parotta

Ingredients:
thawed parotta - 4 (bigger one)
onion - 1 small
tomato -1/2
curry leaves
salt
pepper
green chillies

For masala:
roasted peanuts(or u hv to fry them without oil)
lavangam
pattai
tomato
onion
red chilli powder
dhaniya powder
coconut
cilantro
mixed vegitables

Method:
grind all the ingredients together except mixed vegis. in the cooker add oil & fry mixed vegitables & add the grounded masala & mix well. pressure cook this until the veg get cooked. meanwhile make the paratas into small pieces & keep aside. in a big kadai or vessel pour oil. once the oil get heated add finely chopped onion, curry leaves, green chillies. fry them until the onion becomes golden brown now add tomato. once the tomato becomes soft add parata pieces & cooked masala & mix well. once the water in the masala observed it is ready. garnish & serve hot.

Type 2 kothu parotta

Method:
no need to make masala. use the left over kurma for this. instead of adding masala add left over kurma. kurma sh be a thick gravy. if not make it as a thick gravy before adding it to the parotta.

Muttai kothu parota (egg kothu)

Method:
in the kadai add oil. when the oil heated add onion, curry leaves, green chillies. once they become golden brown add egg, salt, pepper & mix well till the egg cooks(like muttai poriyal) now add tomato. after tomato becomes soft add parotta & masala & cook.

Adhirasam

Ingredients:
raw rice - 2 cups
jaggery (make sure it is pure jaggery not naattu chakkarai use vellam) 1 cup
cardomom
water -1/2 cup
ghee or oil

Method:
soak the raw rice for an hour. drain the water & spread it on the cotton cloth placed on the news paper layers to dry. this observe the excess water quickly. dont allow it to dry totally. when it is still wet & not sticky with the other rice grind it sieve it to get the fine powder. use the medium holed plates or bigger one. keep this in a big bowl ( 4 times bigger than its qty). now in a heavy bottom vessel add jaggery & water & cook for the syrup. to check the consistancy add a drop of syrup in a cold water. the syrup should not melt. if u make a ball it should be a soft ball (not hard ball consitancy). or just before string consistancy. now switch off the stove & add cardamom powder & mix well. add immidietly into the flour & mix well when it is hot. close it with the thin cotton cloth tightly & leave it over night. now make patties & fry it in the oil or ghee in a medium or low heat. immidietly after taking off from the oil press it with the flat plate or with flat masher to drain the excess oil. & keep aside. dough consistancy is much more improtant. otherwise u wont get good athirasams.

Can anybody tell me how to make AVIAL recipe...i saw in page 1...but it doesn't have yogurt in it...my friend made so it was like that only but she said after curry become warm or cool add yogurt like that...
I'll appreciate if somebody tell me that AVIAL...its healthy tasty...

Hi Shivangi,

I have given Avial recipe in my thread also. you can check with it. Let me give that link here. When you prepare "Malabar Avial" no need to add curd in that. If you want to add curd go thought my version. She gave here her version and it is so good. Just click the link and see the recipe. You can add the curd afterwards as your friend's version. There is no limit, you can try many versions and stick on one type which you like most. That is all.

Ingredients

One and half cup rice
4 teaspoon Udad dal
Carrot one
Grated coconut 4 tblspoon
Onion one or two
Tomatoes 2 big ones
Green chilly
Jeera one tablespoon

First soak rice and Udad dal
Then grind it adding salt
Scrape carrot, cut onion, grate coconut, cut tomatoes
Grind these with chilly and jeera and salt
Then add this mixture to the rice and dal and make dosas
