Default Rajasthani Gattae Pulav

Ingredients
For gatte :
2cups besan (chick pea flour)
1/4 tsp salt
2 pinch cumin powder
Very little asafetida (less than a pinch)
2 tsp oil
1/ tsp turmeric
1/4 tsp red pepper powder
For pUlav
1 Cup Rice
2 cups water
1 medium onion chopped
1 tsp garlic ginger paste
2 cloves +1 black elaichi +1 green elaichi+1/2 tsp jeera (all ground)
1/2 tsp turmeric
1tsp coriander powder
Salt to taste
2-3 green chilles

Procedure
For gatte:
Mix all the ingredients and knead it into a dough .the consistency of dough should be like puri dough .roll out the dough in long cylindrical shape .it should be 3/4/ inch in diameter ,these can be of any length .Steam the gatte. For steaming you can boil water in pan with a steel plate or plate with holes and lay the rolled out dough on it .
steam it for 15 minutes
Take it out and cut it into 1/3 inch small pieces
For pulav
Boil the rice and keep aside
In a pan fry onion add ginger garlic paste, add the ground masala, and add turmeric powder, Coriander powder salt and pepper and chilles .add i tbsp of water.
Cook on low flame for some time till it forms a thick paste .add the gatte and 1 more tbsp of water.
Now add rice and mix well and cover for few minutes garnish with coriander leaves.
It can be served with plain yoghurt.

thanks for sending dal batti recipe,for a very long time I was searching for the ingredients of dal batti.long time back i had made baafle but they weren't as desired.. i had baked them in a gas tandoor. can you tell me whether the ingredients of batti and baafle are same or not?

Default Rajasthani Gatte ki sabji

Hi Ladies,

I would like to share one more dish of gatte.
  1. Ingredients:
    For the Gatte :
    2 Cups Gram Flour
    Cardamom, Crushed
    1tsp Oil
    1" piece Ginger
    2 Green Chilies, Chopped
    "¾ Cup Hot Water
    1tsp Saunf/Aniseed Powder
    1tsp Garam Masala
    A pinch of cooking Soda
    Salt to taste
  1. For the Seasoning :
    2 Cloves
    1tsp Asafoetida
    "½ tsp Jeera/Cumin Seeds
    "½ tsp Turmeric Powder
    1tsp Chili Powder
    2 Bay Leaves
    1 Cup Curds
To Garnish :
2tbsp Coriander Leaves, Chopped

Method:
Mix the ingredients for the Gatte adding water as required and prepare a dough.

In a Vessel boil water. Immerse the dough into the boiling water and let it cook for 5 minutes.

Remove the dough and cut it into equal sized pieces and keep aside. Heat Oil in a kadai, add Asafoetida, Jeera, Turmeric Powder, Red Chily Powder, Bay leaves and Cloves and stir for a minute or two.

Now add Curds and mix all the ingredients together. Add the Gram Flour pieces (Gatte) to the gravy and cook for a two minutes. Remove to a serving dish and garnish with Coriander Leaves.

Thanks for liking dal batti.
Ysst the ingradients of baffle & batti are same except that baffle w first boil them & then bake or if want u can deep fry them also .
Batti u can bake on gas tandoor .
I bake in abatti tandoor available in bazar like the Khamman pot.

thanks for replying my post.can you tell me ,how we will make malai kofta without onion& garlic I had made malai kofta but they hadn't come out nice.like we eat in hotels.

Dear Aarr
In malai kofta the koftas are made without onion.
For gravey you can try as below-
ingardient- One cup tomato puree
Half cup Corn floor mixed in Half cup of milk to make the gravey thick.
Kaju 8-10 pieces soaked and grinded in paste.
one tablespoonful Post seeds + One table spoonful Seeds of watermelon peeled ( available in Market ) saoked and made in paste.

For gravey take one largre tblespoon ful refined oil, Heat it and put cumin seeds ,1-2 cloves,bayleaves and than tomato puree,Saute it ,Add red chilly oswer according to taste ,termeric powder 1/4 teaspoonful, Dhania poweder 1 teaspoon ful , Salt according to taste.
Add Kaju & Post seed paste ,again saute it ,add cornfloor and stir it.Add required amount of water boil it add garma masala and corrinder leaves .
Before serving put kofta in a bowel add grevy and serve.
