Default Andhra dishes

Hello,

I am from Andhra. I like the hot green chillies chutney we make in our place called "Pachi Mirapakayilu Pachadi".

I am looking for similar hot green chillies here, but the one I get in the grocery stores here in US are not at all hot. The same with the Indian stores here.

Where can I get hot green chillies?

Default hot chillies

Hey Roja,

I'm not sure what is the degree of hotness in chillies expected by andhra people :?

All I know is chillies in Mexican stores are really hot. I normally buy the dry red chillies from Mexican though haven't tried green ones.

May be you can give a try.

Hi Roja,

My husband loves spicy food a lot. He is bored with the normal chutneys I make for dosa and idli. Can you share green chillies chutney recipe? Is it good with doa/idlis?

Default Recipe for hot green chillies chutney

This is how we make hot green chillies chutney...

Ingredients
1/2 cup fresh hot green chillies
1/2 cup chopped fresh mint
Juice from 1/2 lemon
1/2 inch fresh ginger finely chopped
Salt to taste

Instructions
Wash and dry the green chillies. Cut off the stalks and grind it coarsely.
Mix all the ingredients together about 15 minutes before serving.
Goes well with idli, dosa, vadas, pakoras, etc.

Caution - this will be really hot
Hotness can be altered by increasing/decreasing the number of green chillies.

Well I would suggest you to add the following along with the proportions said in the previous posts

1 tsp coriander chopped fine
2 green chillies chopped fine
1-cup buttermilk
1/8 ts soda bicarb

Blend all the ingredients together and make it as our basic dosai .

Hi Megha,

What you had suggested, is it a dosa variety? Is it taken like a snack or breakfast?

Sounds an interesting recipe to make dosa by adding just buttermilk without any flour

Yes its a dosa variety and used for breakfast. Oops I forgot to add flour to it,
if we donot add flour it becomes our good old chutney

Question Gun powder?

Does anyone know the recipe for gun powder?
The name sounds funny though

One of my friend told me this is a typical dish in Andhra restaurants.
It is served with rice and ghee. However, she has tasted it a couple of times but does not have the recipe.

Do let me know if anybody here know how to make it.

Cool Gun powder - Andhra wonder!!!

Hey Simi,

Your friend is right - it is a typical dish among Telugus. We would prefer to have this as the first item almost everyday in our meal, because it makes you feel much more hungry.

Here you go with the recipe...
Puffed Channa (pottu kadalai) - 1 cup
Red Chillies - 10
Garlic cloves - 10
Ghee - 2 to 3 spoons
Salt to taste (may be 2 tbsp)

Dry roast the red chillies first. Then fry the puffed channa in ghee adding the roasted red chillies, say for 5 mins. Cool it. Then add garlic cloves and salt and grind it to a fine powder.
This should be served with steaming hot rice and ghee.

i think with the above ingredients we can add dried ginger(in tamil its called sukku) also to give an addl taste.
