Default RakshaBandhan Special

Hello Ladies,

As all of you know RakhaBandhan is coming.So get ready for learning this festivals new dishes.Today I want to share Malpua.

Ingredients
250 grams plain flour, sifted
water
1 tbsp. powdered sugar
oil for frying
Sugar Syrup
500 grams sugar
625 ml water
Garnish
1/4 teaspoon ground cardamom
Rose water
Fresh cream sweetened

Sugar syrup
Put sugar and water in a saucepan and bring to boil. Simmer for 8-10 minutes till thick syrup is formed.

Mix sifted flour, sugar and water to form smooth, medium thickness batter and keep aside for 30 min. Heat oil in a shallow flat bottomed pan. Carefully spread the mixture in the pan and fry till golden brown. Transfer the pancake into the sugar syrup. Serve hot garnished with cardamom, rosewater and fresh cream.

Hi all,

Rakshabandhan ka tyohaar aur gujiya na ho ,aisa ho hi nahi sakta.

Gujia is one sweet delicacy that is made especially on the occasion of rakhi or raksha bandhan. Gujia tastes as good as the brother-sister relation ship. Try this on coming Rakshabandhan.
Ingredients:
  • 4 bread slices sides removed
  • 1cup khoya or mawa grated
  • 1/4 cup sugar
  • 1/8 cup dessicated coconut
  • 1/4tsp cardamom powder
  • 2 tbsp fried and chopped dry nuts
  • 2-3 drops kewra essence
  • for frying oil
Method-

mix 150 grams of sugar in water and boil it to make syrup of 1 string consistency. keep aside. on low fire fry khoya add sugar,coconut, cardamom powder,nuts and kewra essence. cook till sugar mixes with khoya well. now dip the bread slices in water, squeeze excess water,fill the khoya mixture and seal them. deep fry till they are golden in colour. dip these gujias in sugar syrup. remove and drain excess sugar syrup. garnish with silver foil. serve it on a plate.

Hi all!

I use to cook Gujiya different which is very common recipe in North India.It is very famous Sweet dish for Rakshabandhan.

Ingredients:



Ghee / Oil to fry
For the Cover :
500 gms Maida
6 tblsp Oil / Ghee (melted)
For the Filling :
500-600 gms Khoya
1/2 tsp green Cardamom Powder
25 gms chopped Almonda
25 gms Raisins (किशमिश)
25 gms dried Coconut
350 gms Sugar (चीनी ) or to taste


Method:
  • Sieve the flour.Mix the six tablespoons of oil with the maida.Using fingers, mix well so that the mixture takes the form of breadcrumbs and binds to a certain extent.Now add some water and knead lightly.Keep adding water as required and knead into a soft but tight dough.Set aside and cover with a damp cloth.Now mash the khoya and fry it in a kadhai / deep pan till light brown in color.Add sugar and cardamom powder into the khoya and mix well.Add almonds, cashews, coconut and raisins.Fry for 2 minutes and remove from the heat.Allow it to cool.Divide the dough into small balls and roll each ball into a small round of 4 inch diameter.Fill half the round with the khoya mixture, fold it and seal the round, twisting the edges inwards.Take care that the filling does not ooze out.Prepare all the gujiyas and spread on a cloth.Heat ghee in a kadhai and deep fry the gujiyas in batches on a medium flame.When golden brown in colour, drain and remove.Store for use in an airtight glass jar.For using moulds, place the rolled dough ball in a greased gujiya mould and fill a tblsp of filling mixture on one side.Moisten the edges of the round and fold one side of the mould over the other.Remove the excess edges and reuse.
