Making Bitter guard fry in a spoon of oil.....

    Sharing with you all... How I used to make Bitter guard fry ?

    For serving 2-3 people :

    (1) Take besan– 3-4 table spoon
    (2) Rice flour - 1/4 tumbler or even less.
    (3) Red chilli powder - 1 tea
    (4) Salt to taste
    (5) Add curry leaves (4-5) – Optional
    (6) Tamarind paste to marinate Bitterguard and to enhance the taste.
    (7) Bitterguard – 4-5


    Cut the Bitterguard into in small circular rings… add a pinch of turmeric powder and half the quantity of Tamarind paste and little salt to it…. Keep aside for marinating (10-15 mins).

    (If you don’t like the Bitter taste… pour out the water collected in the bottom - As we like the bitter taste (good for health too ) … we won’t waste that water)

    If you are pouring out the water collected… then add the tamarind paste again with salt and Chilli powder with Besan and Rice flour mix. Mix it well with the Bitterguard.

    Spread out the mixture in the glass vessel. Keep the mixture in the microwave oven for 5-6mins and take it out.
    If you want this to be seasoned : Fry mustard and urad dal with hing in a pan with a spoon of oil and put the cooked bitterguard into it… Let it get seasoned for 5mins… That's it ...

    It will be “Morumoru” Bitterguard fry…..

    That's really a wonderful way to make bitterguord with a spoon of oil.:thumbsup

    What I do is almost the same except for adding besan and rice flour.

    After chopping the bitterguord, I marinate them for 15-20min in salt, some corn flour, tamarind paste, dhaniya powder (mixture of dhaniya, channa dhal and red chillies coarsely powdered) haldi and hing with a few drops of water. Like you mentioned, I also don't discard the water. :) Yes, I do microwave for about 10min and then cook it on stovetop to make it golden brown roast after tempering.

    But Gowri, major difference is I do add more oil than the spoonful you have specified. :)

    Sure, will try using your method next time i buy this veggie !

    Thanks dear for pouring your ideas here...

    As he did not like chillies "at all" I rarely use the method (Curry powder) , which you have specified..... I liked it very much, the smell, freshly grounded chilli powder.
    But he likes the taste with besan and rice flour (Bajji flavour), so used to do like this.
