Default Extra long grain rice

Hi

I am from Austin, and the Indian stores have run out of Ponni Raw rice that we normally use for rice and idli/dosa maavu etc. They re saying the extra long grain rice is as good as raw rice.

Has anyone here used it? And does it work well for idli etc?

thanks pratapa! The proportion etc is the same as raw rice is it? I usually put 3:1 boiled rice to raw rice! Does the same proportion work for this as well?

The domestic rices in the USA are usually short or long grain and can be brown or white. If you want a stickier rice then pick the short grain. Due to the harvesting methods in USA you don't need to rinse the rice and it is recommended that you don't rinse in order to preserve vitamins. Cooking ration is 1:1 water to dry rice. Parboiled rice is Uncle Ben's if you are ever looking for that.

If you want more exotic rices, you can get in health food shops types like Tibetan black (forbidden) rice. Also available in heirloom shops especially in the South are the rices grown in USA historically some of which originate in Africa hundreds of years ago.
