We often have gettogethers at home. For that whenever I keep a fried item say for e.g. aloo bonda or batata vada,I half fry the vadas and then just before serving, fry it again to serve it hot.In the process, the product tends to be oily. Can anyone suggest ways or adding some ingradient in say besan{gram flour} so that vada does not look oily.Serving on tissue paper is one way but it is wastage of oil.

How about frying them completely and then re-heating in microwave. This way they won't be too oily.

thanks a lot Ms.shivachoube for your suggestion. But I feel, they do not look so freshly fried. Can something else be done?I read in the kitchen tips section,to add salt to the oil for frying I am experimenting with that also.
