Hi all,

We had friends at my place for dinner last evening for dinner..We had veg pulao, stuffed brinjal curry, cucumber raitha,bhindi-carrot fry, jackfruit curry, bottlegourd rasam and paapad. And for desert we had gulabjaamun.I prepared them with MTR instant mix powder.I like this a lot.amma used to prepare this a lot when we were kids. After comming to usa,its for first time i prepard it at home.we normally buy it at the sweets section from indian stores.I was happy to prepare and have.

I ground the urad dal batter for vada to serve for appetizer, but since my kid was cranky ,i didnot get time to make them.So we are going to have those tommorow for lunch. As usual there are lots of leftovers. So those will run for lunch and dinner for today.

Cheers,
Vaishu

Dear Vaishu,

Your dinner array sounded very yummy. BTW, how did you prepare jackfruit curry and bottlegourd rasam?? I have never heard of bottlegourd rasam. So it is your turn to share the recipe:)
Yes, MTR gulabjamun mix is not bad at all. But now I have the correct measurements, I generally do the milk powder jamuns.
This weekend was pretty crazy. I managed to make tomato dhal, spinach-brinjal curry, rasam and cucumber salad yesterday. We ate out in the evening.
I made cheese and mushroom ravioli baked with tomato sauce and cheese on top. Served it with a geen salad made with lettuce, celery and tomatoes. I garnished it with stir fried sweet and sour tofu tossed in sesame seeds. The salad was really good:) Supper was lapsi upma with lots of veggies in it.

L, Kamla

wow Kamla! You are excelling in both Indian and American dishes, switching them back to back! I have never made any non Indian food, other than sandwich, I sure will try some of the ones like pizza listed here.
Hubby and kid hates anything other than south Indian food, so I don't even have much space for creativity actually.
Mushroom ravioli sounds yummy, I have to try it during my text trip to an Italian resturant(with co-workers) :)

Today I made beans poriyal, sambar and vathal fry(dried chillies).

Hi,
I did not cook for nearly one and a hald month, was at Amma's place. Had to refresh memory after coming back.
Now, as FIL is here, sambhar and rasam everyday and with some curry.
I started on diet and so 2 vegs for me with salad or raitha. The usual dosa and idli and upma.
But I tried the lapsi upma of Chitvish and mmmmmmm.......... delicious diet. I intent to make it regular.

Wink Re: Whats for dinner today?

Dear Kamala,

Rasam is like regular rasam .

Bottle gourd rasam/anapakaya pulusu

Seasoning ingredients :
--------------------------------
Garlic clove-1 clove(crushed)
Methi seeds-1/8th tsp
Mustard seeds-1/8tsp
Cumin seeds-1/8tsp
Red chillies-2
Curry leaves-few
Cilantro leaves-few

Ingredients for rasam
---------------------------------
1).Bottle gourd(small piece)-peeled and cut into 10 one inch pieced
2).Tomato -1 chopped fine
3).onion- 1 inch piece chopped/julliened
4).Rasam powder-1tsp
5).pepper powder-a pinch
6).turmeric-1pinch
7).Tamarind- two 1 inch pieces
8).Jaggery-1 small piece or 1tsp of sugar
9).Water-4 or 5cups(rice cooker measuring cups)
10).besan flour-1tsp mixed in 2tablespoons of cold water

Procedure :
----------------
1).Make a paste of the following in mixie or pestle

-.garlic cloves-1
-Cumin-1/2tsp
-.Coriander seeds-1tsp

2)boil 4cups of water and put all ingredients from 1-7.Cook until half done. Then add the ground garlic+coriander+cumin paste and boil for some more time.
3).At this stage u may add the besan flour mixed with water. This step is optional.

4)).Now do the seasoning with 1tsp of oil in another pan one after the other in the order mentioned and add this boiling rasam to it and close the lid for 5minutes.

Recipe for panaspottu kura:
Its just like the normal pulihora we prepare.
young green jackfruit-1can
green chillies-4
ginger-1 inch piece grated
salt
turmeric
mustard sauce : ground together 1.5tsp of mustard seeds +1small red chilly and mix it with a pinch of turmeric ,pinch of salt andlime juice.
seasoning :
-------------
red chillies-4
channa dal-1tsp
urad dal-1tsp
mustard-1tsp
cumin-1/2tsp
curry leaves-4-5 leaflets
-Open the can, drain the water, rinse the jackfruit once and finely grate the jackfruit pieces or chop it fine like cabbage. Now add some salt, turmeric, curry leaves,1 finely chopped green chilly and cook it with little water until soft.(U can skip this cooking and cook after seasoning.its optional. But i cook it first and then do the seasoning).
-Now heat in another pan and do the seasoning in another pan one after the other and add grated ginger, chopped green chillies, followed by the cooked jackfruit.Stir it well and close the lid and cook it on low flame for 3-4minutes.Now add the mustard sauce and cook for couple of minutes covered and switch off the stove.Add some more curry leaves, stir well and cover and leave it aside for some time. The mustard sauce is absorbed well.Serve with hot rice.

So what else,Kamala u make innovative meals.I like to have salads or sandwiches for lunch or dinner. But after making them, also my hubby would ask me for our indian food in addition. He considers them as apptizer or snack .I need to prepare both for the meal.So i end up in indian stuff.

Cheers,
Vaishu
