Question Recipes for outdoor cooking

Hi,

We are having an outdoor picnic with a couple of friends and i am unable to decide what recipes can be made on that day.Can anybody give me a few recipes to cook ?

Hi Kodavati,

It depends on what type of food you would like to take.

Do you want to prepare south indian, north indian, or items with bread like for sandwiches etc?

Will you consider salads/soups as an appetiser?

If you please elaborate, I can give you suggestions.

If you are a non-veg, you can have a BBQ.....If a Veg, then you can grill veges (corn), have potato salad, macaroni salad, or fried rice. Foods that are easy to eat and easy to clean up.

Hi kodavati,

Here are a few ideas right on top of my head.

(1) Salad - You can mix all the veggies, but prepare and carry the salad dressing separately. You can add the dressing & mix it just before you all sit down & eat.

(2) Idlis - idlis will be yummy irrespective of whether it is hot or cold.

You can smear it with Milagai podi (mixed with oil) or you can carry the idlis, chutneys (tomatoes chutneys will be better for picnics) separately.

(3) Chapathis- You can stuff the chapathis with the sabzis,roll it with aluminum foil or cling wrap.
In the same category, you can make different stuffed parathas too..and in this case the veggies&spices are already in the paratha.

(4) Rice items- Ideal rice items are Tamarind rice (pulianchaadam) and lemon rice for picnics. That too with chips/vadams etc...Awesome !!!

Seasoned Curd rice is another mindblowing combo with the above. You can mix the rice with milk, a little curd and then season it with mustard seeds, green chillies,ginger & curry leaves. Of course, a pickle bottle is a must for this.

(5) Sandwiches- You can make the sandwiches at home, wrap them in cling wrap and arrange in neatly in a brown bag. Even though we add all the ketchup,mustard,hot sauces etc in the sandwich, if you have space, you can carry small bottles of the above with you..in case.

(6) Buttermilk/Juices- If the weather is warm/hot, then you can make fresh juices or spicy buttermilk and carry in bottles.
Other wise, you can take small carton juices in coolers.

Of course, snacks ( in small individual packets ) are other things you might need !
especially when we have kids.

Disposbale plates
Disposable cups
Lots of paper napkins
Plastic spoons/forks etc
Newspapers to spread out..
A big sheet to sit on
A trash bag (that way we can all dump it in one bag and later dispose it in the bin)

Most important...lots of water bottles !

Sorry yaar, I am a vegetarian.

But I do make eggs for my dh and kids.

In case of sandwiches, you can probably make egg sandwich.

You can boil the egg, slice it , add salt & pepper and keep between the toasted breads.

Hi Kodavati,

I think i have misinterpreted your question !

Do you want to prepare everything beforehand for your picnic..or are you going to cook outside?

I was under the assumption that you were going to carry everything for your picnic..then it struck me..probably you wanted to cook outside then and there..!

What is your plan- to cook @ home or start cooking from scratch outside?
