| Can anyone tell me how you prepare artichokes?

| Hi Usha, Are you looking for recipes or how to prepare the artichokes to get them ready for cooking? If the latter then here are a few steps. A little painstaking: First wash the artichokes by keeping them immersed in a pot of water for about an hour or more. So that soil between leaves can be removed. Cut the stem off from the bottom, so that the artichokes can sit on their bottoms. Then remove the outer layer of hard leaves using your paring knife. Then cut about an inch off the top of the artichoke. Take the tips off the remaining leaves by using a scissor. Now you are all set to cook them. You can cook them by lining them up in a broad pan.( on their bottoms), cover with water and add a bit of lemon juice. Cover and cook for about 30 minutes or more till they are tender. When you insert a knife, they should go in without any effort. Drain and cool , and they are ready to be used in any dish. They taste great in pizza: spinach and artichoke pizza with alfredo sauce Also part of any pasta dish. Stuffed artickokes are a dish of their own. Let me know if you want any recipes. | yes please Vandhana, I would appreciate recipes using artichokes. I have four of these that I recd. part of a vegetables pre-order program and I hate to throw away produce unless they are spoilt.

| Hi Chitra and Krithika, I learnt to prepare fresh artichokes and made the pizza from the tips and recipe given to me by Vandhana. My family loved it. Did you know that artichokes are the # 1 among several veggies in the antioxidant content. In a website today, I also found a salad recipe with asparaus and artichokes which I have not tried yet. If you like, I will try and let you know.
