Watercress Paratha

I am trying to use watercress leaves in our food as it contains iron, calcium and folic acid in addition to Vit A and C.

Today for lunch, I tried watercress paratha and it tasted very good.

Atta 1 cup
watercress leaves 1/2 cup, washed
Ajwan seeds ( Omam) 1 tsp powdered
salt and oil

Grind the leaves with very little water. Mix it with atta, powdered omam, salt and oil

make paratha as usual.

Wonderful idea...seems like palak paratha..usually I do add ajwain whenever I make chapathis and parathas ( by default).

Nivedi, thanks a lot for starting this delectable and healthy thread..!!

So, to make a list of things I learnt in this thread..

(1) Celery Kootu- Sundarusha
(2) Bok Choy Porial/Kootu- Sundarusha
(3) Beetroot leaves Thogayal - Nandhu
(4) Swiss Chard Poriyal- Nandhu (yet to try this)
(5) Radish Greens Dhal- Nivedi (yet to try this)
(6) Watercress Paratha- Sundarusha (yet to try this)


Need to read all the posts in this thread from the begining, to look for more recipes.
Thanks a lot ladies...keep sharing more recipes with green leafy vegetables !!

Red Swiss chard with potatoes

Red Swiss chard 1 bunch
onion ( diced) 1/2 cup
boiled and peeled potatoes 1/2 cup
raw mango pieces 1/4 cup
small eggplants 2
chili powder 1/2 tsp
tamarind juice
green chilies 2 or 3
salt

cook all of the above together except boiled and peeled potatoes. If raw mangoes are not available, can substitute with tomatoes. Add potatoes toward the end.
If it is slightly watery, may add a little bit flour or mel koottu mavu at the end
Season with urid dal, chana dal and mustard seeds.

After reading Nivedi's post about purslane googled for it and thought this one interesting:

realised that there is a lot of lambs quarters growing in my backyard. have to muster up courage to try them.

Blondie - Purslane grows very quickly. I planted a few stems and they are growing fine.

very interesting thread ladies. Thanks for all the contributions.

We make maggie quite often during week days and try to add the green leafs whenever possible. Just do the thadka, saute the greens(choose anything among cut mustard greens, spinach, methi leafs, beetroot leafs), and let these cook covered for few minutes and then can add either kidney beans or black bean and the maggie powder and the noodles. Let them cook until done and a healthy recipe is ready for the family.
