how do we use herbs in indian cooking?

    Hi ladies,

    I have a section for herbs in my garden...my herb garden. I have. Pretty good varieties.
    Since most of them are perrineals I hope they wll be back this summer too.

    Hubby me and my daughter are very much into gardening... but other than mint , coriender an some italian basil...I dont use the others. They are just ornamental:)
    Any suggestions

    Most of my herbs like Rosemary, Dill, Chives, Basil etc are used in Italian Cooking like Pastas and cold salads. Rosemary is universal, can be used in bread too.

    Hi Rakii,

    Thank you very much . I guess I should start using these herbs in my pasta and salads.
    I have been using just the readymade pasta sause and some basil on top. I was looking for a good veg lasagna... do you have any suggestion?

    Dried marjoram is excellent added to bean dishes instead of Indian spices. Use instead black pepper and salt and assorted vegetables like carrots. Fresh basil can be blended with pine nuts, extra virgin olive oil (the better kind), parmesan cheese and garlic if you eat garlic to make pesto. Freeze it and eat over the winter. Use thyme very sparingly...it's a strong flavor. Many traditional American recipes rely on herbs so go to some site like allrecipes.com.

    Dry your herbs by washing (if you have to otherwise omit this step) and tying in bunches and hang them upside down out of sunlight. I hang mine from the staves of my patio umbrella and leave for several days until dry (take them in if it rains).

    I haven't used herbs much but this is what I remember from a book as good combination - tomatoes+basil, carrot+dill and asparagus+taragon (in vinaigrette)

    Well on the topic of herbs but not necessarily gardening, there are some famous herb masalas in USA. In particular, poultry seasoning is good. You can find these herbal masalas in the stores....labels will explain the various uses.
