i have done
lotus with onions.
small fancy boat with gourd
crocodiles with bittergourd
lanterns with papaya
flowers with carrot, raddish etc
corn cob with carrot
swan with apple
cockroach with brinjal
boatmen with brinjal and ladies finger...
octopus with banana..
these are vegetable carvings...

but the ones you have posted
are veg arrangments and wow..!!
what is used for the eyes
i use pepper but this looks like some seed...
