    Method :
    Slit the brinjal into 4 with out separating the pieces and with the stalk on. Keep them in salted water. Fry the different dhals, coriander and chillies in a little oil, powder well and add the asafoetida also. Mix a little salt and water and fill the inside of the brinjal with this. Heat the remaining oil, put the filled brinjal and carefully saute well. Pour, 1 cup of water and allow the curry to simmer. Add <SUP>1</SUP>/<SUB>2</SUB> cup of tamarind water also and when the gravy is thick and coats the brinjal, remove from fire.

    Things to be ready:

    4-5 small brinjal
    methi seeds/vendhaiyam
    cumin seeds/ jeeragam
    red chilli/millagai vathal
    corrainder seeds/ dhania
    urad dal
    coconut
    tamarind
    onions - 2-3 medium size

    1. Fry 1/2 spoon of methi, 3 spoons of cumin seeds, 2 spoons of corrainder seeds, 10-15 red chilli(depending on your spice level), 2 spoons of urad dhal in 1/2 spoon of oil and keep them aside to cool.

    2. Grate cocunut and slight heat 2-3 spoons of cocunut and add it to the mixture is step 2.

    3. Add turmeric powder and grind the ingredients fried in step 1 and 2 with little salt.

    4. Wash brinjal and slit from its bottom do not remove the kambu. Stuf the mixture which u grind in set 3.

    5. Chop onions. Add 3 spoons of oil and fry onions until it turns golden brown. Now add brinjal and fry it for a minute.

    6. add tamarind water/tamaring paste prepared from 1-11/2 goosberry size of tamarind. Simmer the stove and allow brinjal to get cooked.

    7. Add the remaining masala powder which u grinded in step 3 and add salt to taste. Add 2-3 spoons of oil when this gravy boils.

    Best to be served with hot rice.

    It tastes really gud with less oil also....

    My friend and an Ilite shared this recipe for me..Has worked out great..Do give a try

    Ingredients:
    Small brinjals (Indian eggplants)
    Dhaniya Powder- Dry roast whole dhaniya, gram dhal & red chillies & powder coarsely
    Salt
    Hing
    Turmeric
    Oil for frying
    Method:
    1. Choose firm, small and fresh brinjals for this recipe.
    2. Slit the brinjals into 4 from the top to the side, keeping the bottom intact. We can remove the green stem at the bottom or keep it as such.
    3. To the dhaniya powder, add hing, salt and turmeric powder. Mix them well in a bowl.
    4. Now stuff the brinjals one by one with this powder (depending upon your taste) and place them carefully so that the powder does not spill out.
    5. Place a Kadai on the stove and pour some oil for shallow frying.
    Please note : The brinjals should not be deep fried and adding too much oil will make it soggy.
    6. Then add mustard seeds to the oil, after they pop, add 5 to 6 brinjals at a time .
    7. Keep them in medium heat. After a minute or so, close the kadai with the brinjals with a heat resistant lid.
    8. This aids the brinjals getting soft on the insides and the shallow frying makes them crisp on the outside.
    9. After 2 to 3minutes, turn them over so that they are evenly cooked on all sides.
    This way, place them in batches of 5 or 6 depending upon the size of the kadai/pan.
    10. It may take approximately 5-6min for a batch.
    Drain them on a paper towel. Some of the masala powder may over flow into the oil which can be removed from time to time. Add more oil whenever needed.
    Ennai Kathrikai goes well with Sambar rice/Bisibela bhath and curd rice too !! Enjoy !
