Hi all, I persued education from Indore.Aaloo Kachori was my daily breakfast. After leaving Indore I was missing Aaloo Kachori a lot.Then I ask the recipe of aaloo Kachori to my Aunt who born and brought up there. Aaloo Kachori Ingredients: Maida-4 cups Ghee-4 tbsp Dahi-2 tbsp Water -1/2 cup Green chillies-2,3 Ginger -1 1/2 tsp Boiled mashed Potatoes-300 g Coriander (dhaniya) powder-1 tsp Cumin (jeera) powder-1 tsp Fennel (motisaunf), -1/2 tsp Garam masala-1 tsp Turmeric (haldi) powder-1/4 tsp Lemon (nimbu) juice-1 tbsp Salt-According to taste Green coriander -2 tbsp Vegetable oil Method: 1. Mix the flour and salt in abowl. Add ghee, rub it. Add yoghurt and 6 tbsp chilled water; knead to make a smooth and pliable dough. Cover with plastic wrap and keep aside for half an hour. 2. Combine the remaining ingredients except oil in a mixing bowl and knead with hands until well blended. Divide into 18 portions; keep aside. 3. Divide the dough equally into 18 portions. Shape each portion into a patty. Cover with a damp towel or plastic wrap and set aside. 4. Flatten each patty into a 2 1/2 inch. or 6.5 cm round. Place one portion of filling in the centre of the dough, then bring the sides of the dough over the filling to enclose completely. Pinch the seams together until thoroughly sealed. Cover with a plastic wrap or a moist towel. Keep aside. Shape and stuff the remaining patties. 5. Heat the oil in a kadhai.. Slip in a few patties . Fry until pale golden in colour and until they sound hollow when tapped. Drain excess oil and serve hot.Enjoy it with Ketchup.

Hi all, Thanks for sharing the recipe of Allo Kachori.I enjoyed it in Indore very much.Truly you can not find it anywhere else.Its a real treat of Indore. Indori-Garadu I was in Indore for 4 years. There I ate Garadu.I don't know whether many of you have tasted it or not But it is very famous and rare recipe of Indore.I usually ate it in Sarafa I am so sorry I can't tell you the method of preparing it. If anybody Knows please share it.

Hi all, Jab Indori khane ki baat ho aur Poha na sikha jaye aisa ho hi nahi sakta. Poha Ingredients: Poha : 2 cups Potatoes : 1 Onions :1 Green Chillies:2 Mustard Seeds:1/4 tsp Curry leaves:4 Oil : 4 tblsp Turmeric powder:1 pinch Lemon:1 Corainder leaves Salt to taste Method: First Soak the poha in water. Wash and drain all the water.Add some salt.Add oil for frying.Add Mustard seeds,Chillies,curry leaves onion and potato to oil.Fry it till light brown color changes.Cook till they are done. Add the poha, corainder leaves and stir. Keep it on slow flame for 5- 7 minutes.Let it cool for sometime and add then lemon juice.Now poha is ready to serve.
