Hello Ladies
Here is the Diamond curry, it's recipe and picture DIAMOND CURRY Ingredients for the curry 2 large onions, 1” ginger, 5- 6 garlic cloves(optional), 2 large tomatoes(pureed) or can use tomato paste 2 tbsp, 1 or 2 green chillies, 2-3 tbsp cooking oil, 1/2tsp turmeric powder, 1 tsp cumin powder, salt to taste, ½ tsp garam masala, water, ½ tsp sugar For making diamonds 1 cup besan, 2 ½ cup of water, 1tsp oil, ½ tsp cumin seeds, a pinch of hing, coriander leaves, 2 green chillies, salt to taste METHOD Make pastes of Onion and, ginger and garlic in the mixie, Heat oil in a kadai put in onion paste and fry till light brown. Add ginger garlic paste and fry for some more time, put in tomato paste, green chillies(paste), turmeric powder, cumin powder, garam masala, salt to taste, sugar then fry gently till fat separates, to make gravy add enough water you want. And bring it to boil For making diamonds Take 1 cup besan, add water and keep stirring, no lumps should form Heat oil in a kadai put in hing and cumin seeds roast little add besan batter and keep stirring so that it does not form lumps. Add finely chopped coriander leaves, finely chopped green chillies, and salt keep stirring till mixture starts leaving the sides of the kadai. Grease a thali put this batter into the thali and flat it with hand keep for a while say around 20 minutes. Cut into diamond shapes When the gravy is ready add these diamonds into it decorating it with coriander leaves Can be served with rice or chappaties

Besan Idlis: Batter Ingredients: 1cup - besan 2 tblp- rava(sooji)-this gives a coarseness to the idli..as besan is too smooth. 1/4 cup -curd. 1tblsp- carrot grated 1tblsp- finely chopped beans. 1tblsp- finely chopped cabbage. 1 - chilli finely chopped 1/4in -grated ginger finely chopped coriander pinch of soda bi-carb salt to taste. In a bowl add besan, rava, Curd and water and soda bicarb. Mix well and make a smooth batter. The batter should be of idly consistency. Add salt and set aside for 2-3 hours covered with a lid. Stuffing: Grated cauliflower- 1tblsp. GratedPaneer - 1 tblsp Peas - 1 tblsp chopped onions - 1 tblsp chilli powder - apinch dhani powder - two pinches jeera powder - a pinch Saute the onions till translucent, then add the carrot, cauliflower and peas and saute.... add the three powders and salt. mix them well...(even if they are not fully cooked they will get cooked in the steaming...) but ensure there is no raw smell. To make the idlis: Now you can add all the finely chopped vegetables, ginger, coriander to the batter and mix it well. make idlis of your choice. either the mini, or the normal. For the stuffed ones..just fill 1/4 of the mould and then place a spoon of the stuffing, then cover the mould with batter Steam for 10 minutes as normal idlis. Serve hot with chutneys or sambhar of your choice. |
