| | Re: "Besan-Cooking" Contest 2008 - Entries This is my winning entry ..... I could not n do not know how to reduce the size of the photo...pls help.. Besan Phirni. INGREIDIENTS... Fresh besan 2 tbsp full. 2 tbspfull butter or ghee. 10 almonds soaked and grounded into paste. 1/2 tsp dried ginger powder. 1/2 tsp cardamom powder. A few saffron strands crushed. 2 1/2 cup plain milk(soak the crushed saffron in this milk) 2tbsp honey. 3 tbsp full cramalized condensed milk. Sugar 3 tbsp full.. 1 tbsp sliced nut(almonds, pistachious, cashew nut) METHOD..... 1...Heat ghee n fry the besan on low flame till the raw smell vanishes n nice aroma starts coming. 2.Take off flame n cool throughly. 3.Heat milk then add the roasted besan n stirr throughly till no lumps r left. 4.Add cardamom powder, ginger powder and the grounded almond paste. 5...Cook the mixture well, the consistency should b like a thick soup. 6.Add sugar n cook till the sugar has been dissolved. 7.Add the condensed milk n honey n give just one boil n take off the flame.. 8.Garnish with thinkly sliced nuts n serve hot or cold... Keep the mixture little thin as it will become thick as it cools down.... Note...Adjust sugar to ur taste..as condensed milk n honey r sweet too. Honey n the dry ginger powder gives a lovely taste n aroma... Enjoy....

And Here s another one....
Besan Chutney...
Ingredients:
(serves 2)
1/2 Cup - Besan
1/2 - Medium sized onion
1 - Medium sized tomato
1 - Green Chillies
1/2 inch - Ginger
1 small lump of tamarind soaked in 2 tbsp water
1/2 tsp garlic paste.
1/2 inch mango ginger
1/2 tsp cumin seeds
Few Curry leaves
1/2 tsp - Turmeric
1 1/2 tsp - salt or to taste
A pinch of hing
1 tbsp - Oil
2 tbsp green corriander leaves chopped
For Tempering :
1 tsp - Mustard seeds 1 tsp - Urad dal
2 - Red chillies
Slit green chilli into half. Chop finely onions, ginger and tomotoes.
Add 2 cups water to besan , beat it well with a whisk to make sure there are no lumps .
Take a pan, on medium-high heat, add oil and do the tempering. Add mustard seeds, urad dal and red chillies. When mustard seeds starts splutters, add green chillies, chopped ginger, cumin seeds, hing, chopped onions n garlic paste. Stir well and cook till the onion gets transperent.
Add tomatoes and mix well. Add turmeric. Cook for some more time. Add besan paste now and lower the heat.
Add salt and stir it well and let it cook till the besan becomes thick and the raw smell disappears.Add soaked tamarind water n cook for a few more minutes on low flame.
Adjust the hotness of chillies n salt to ur liking n taste.
If u like it thick give it a few more boils...
Turn off the heat..Sprinkle chopped green corriander leaves.
Serve it hot with chapathis or puris. Relish it

Wow, very nice entries Moonbeam, Arunarc and Shanvy..! I can guess how difficult it would have been for chitvish to decide the winner. Shanvy, how can you say you have no creativitity, I just feel like grabbing the stuffed idlis..!
Ok, here comes my entry. I chose Chitvish's Besan milk burfi. It has simplest of simple ingredients( ofcourse besan is the main ingredient ) and is quite an easy recipe to make. The recipe is at I love sweets!

Hi all
This was my entry. First time that I entered a cookery contest and first time that I made dhokla and FIRST time that some members of my family tasted dhokla!!! Congrats to all who participated - will be definitely trying some recipes. BESAN DHOKLA RECIPE Ingredients: 350 gms Gram flour (Besan) 1cup Curd (Stirred) 1tsp Green Chilies (paste) 1tsp Ginger (paste) Salt to taste 1/2 tsp. turmeric powder 1tsp Bi-carb soda / Eno fruit salt 1 tbsp Lemon juice 1tbsp Oil For Tempering Few Curry leaves 1tsp Mustard Seeds 2tsp Oil Garnish with Coriander leaves (chopped) 2-3 green chilies (vertically slit) Preparation: · In a bowl add gram flour (besan), Curd and water. · Mix well and make a smooth batter. The batter should be of thick consistency. · Add salt and set aside for 4 hours covered with a lid. · Add the ginger and green chilli paste to the batter. Also add turmeric powder and mix well. · Keep the steamer or cooker ready. · Grease a baking dish (it should fit in the steamer or cooker). · Now in small bowl take a tsp. of bi-carb soda or eno, 1tbsp oil and lemon juice and mix well. · Add this to the batter and mix well. · Pour the batter into the greased pan and steam for 10-12 minutes or till done. · Cool for sometime and cut into big cubes. · Heat little oil in a small pan and add mustard seeds and curry leaves allow to splutter. Remove and pour it over dhoklas. · Garnish the besan dhokla with coriander and slit green chillies. · Serve with hari chutney. |
