Default steamed sweet idlis

Ingredients : Rice Flour - 1 cup, coconut grated - 1 cup, jaggery powder - 2 cups, elaichi powder 1 teapsoon, oil 1 tablespoon, water.

Method :
In a thick pan, heat jaggery powder by adding 1/2 cup water, stir and cook for around ten minutes and allow the jaggery to form into thick consistency. Add grated fresh coconut, elaichi powder and mix togerther to form into thick consistency. Remove from heat and let it cool. Make small balls of the jaggery coconut mixture.

In a bowl take rice flour add lukewarm water and mix to form into dough. rub little oil on hands. make lemon sized rice flour balls. take one rice ball into the palms and flatten it on the palms. keep a jaggery coconut ball in center and fold from all sides to make a ball shape and flatten on the palm. Keep these in the idli plates and steam without keeping whistle, for about 12 to 15 minutes. Remove from idli cooker and serve hot.

Default idli (sweet pumpkin)

Idli Rava (available at all leading Stores) 2 cup, grated fresh coconut 1/2 cup, grated sweet pumpkin - 1 cup, green chillies 4 to 5 cut into small pieces, coriander leaves finely chopped, salt to taste,

Method : soak idli rava in water for about 1/2 hour to 45 minutes. Drain out excess water and put the idli rava in a bowl. To this add grated fresh coconut, grated sweet pumpkin, green chillies, coriander leaves, salt to taste and mix well, add little water if required. Make this mixture into idli shapes and Place this mixture in the Idli Plates and steam the idlis for about 15 to 18 minutes without keeping the whistle. Remove from heat and serve with chutney.

Another form of idli is rava idli. Use sooji rava, which is used daily for preparing upma. Fry the rava in a pan without using any oil. Keep aside. In a pan put 1 spoon oil, add mustard and allow to splutter, to this add, 1 teaspoon chana dhal, 1 teaspoon urad dhal, cashewnut chopped, curry leaves, green chillies, coriander leaves and season. remove from heat. Add this entire seasoning to the fried rava. Mix 2 cups of thick curds to the rava and seasoning mixture. add salt, mix all ingredietns together. Allow the mixture to set for atleast two hours. Then put this mixture in idli plates and steam in idli cooker for about 12 to 15 minutes.
