Vegetable Wheat Pasta
250 gm wheat pasta
3 tbsp olive oil
1 bunch spring onions (finely chopped)
8 to 10 small florets of cauliflower
1 carrot (diagonally cut into strips)
6 to 8 French beans (diagonally cut into strips)
1 packet of baby corn (diagonally cut into strips)
½ cup American corn
1 packet mushrooms (washed well and sliced)
¼ packet of soya paneer (tofu) cut into cubes
200 gm pasta sauce
1 tsp vinegar
Salt and pepper to taste
Boil the pasta as per the instructions on the packet.
Par boil the cauliflower, French beans, carrots and keep aside.
Heat oil in a non-stick wok. Add spring onions and sauté till transparent.
Add mushrooms, baby corn, American corn and sauté till done.
Add the vegetables and cook for 2-3 minutes.
Add the pasta. Stir for a minute. Add soya paneer, pasta sauce, vinegar, salt and pepper. Mix gently. Simmer for few minutes and serve hot with garlic bread or a brown bread sandwich.
Note: One can also use boiled eggs instead of soya paneer.
