Gajar aloo thepla

2 medium-sized carrots (grated)
1 medium sized potato (boiled & mashed)
1¼ cups wheat flour (atta)
2/3 cup gram flour (besan)
Salt to taste
1 tsp red chilli powder
3 tbsp oil

Sieve wheat flour and besan separately. Mix wheat flour, besan, grated carrot, mashed potato, salt, red chilli powder and then add sufficient water to make semi hard dough.

Knead it well and rest it for ten minutes. Divide into eight equal portions. Roll out each portion into a six-inch diameter chapati.

Heat a tawa. Place the chapati on it and roast for a minute. Flip over and dribble a little oil all round. Roast till lightly browned. Flip over again and dribble a little more oil all round. Roast till the second side is lightly browned. Serve with pickle.
