Roasted Nuts

I have this big tin of roasted peanuts on my kitchen countertop. Since I buy it wholesale it costs me much lesser than even smaller quantity would cost. I did not start this about cost though. I wanted to share how much I use nuts in my cooking. YES. If anyone had thought I sat and ate all these nuts .. what are you nuts??!! I initially bought these nuts to use in my Tamarind Rice. I truly believe these are very essential to that particular rice dish. slowly it progressed to coconut rice and vangi bath. Oh even to bisibhela bhath. My father even kidded that since its right there on the countertop I am developing this habit of dropping it into everything in sight. Wait till you hear where else it went next?!!!
Into my Chutneys !! One day I was making coconut chutney and ran out of the pottu kadalai that i normally use. So in went my dear roasted nuts. And oh my everyone RAVED about it so that became a standard for ALL chutneys. Can you believe that !! I am sure such wonders existed for many years but I accidently discovered on my own and so my pride and puffed out self or puffed up self. (No wonder i have a weight issue)!!!
Now the wonderful nuts are travelling to my Italian cooking and Thai cooking !! Ofcourse sometimes I roast them in the oven or blend them with olive oil and basil to make a pesto to my Italian cookings. But I love the flavor and texture these nuts provide.
Many thai dishes do use peanuts so this is no new invention. But I just went about this my way so I feel like sharing this with all. Blended nuts either peanuts or pinenuts with corainder too makes a good and different pesto..
I sometimes stretch these to other NUTS too!! can be roasted in oven, can be had with onions and chillies, can be broken in blender to add to Thai food..The aroma of nuts being roasted in the oven is heavenly..Just takes a few minutes but really brings the flavors out. I almost always work with unsalted nuts only..really dont think we need that extra salt.
Yesterday I did a new turn to my nuts INCLUSIVE recipes..I was making a tomato patchadi and came out good except i was a little too watery for my taste. So in went my nuts into a blender and made them into coarse powder to add to watery patchadi and VOILA it became a thickening agent and added the required consistency and OMG the taste.. unbelievable..again the great cooks here must know all these trade secrets but its just so much fun to experiment and discover and share..
Now have gone as far to make a sandwich spread with just these roasted nuts, corainder or pudina and pinch of salt..yummoh!!!!!
And the best use of all may I say is you can POP a few into your mouth in the midst of all these experiments !!!!!!! What better use of NUTS?

| | one more to add to ur nuts here, just dry roast the nuts and add some garlic pods and red chillies u can fry it if you want or use it just straight, some salt and blend it without water, there you have a different molaga podi kind which tastes gr8 with even chapathi, my kids love them...sunkan |

| | IL ites will wonder if both Cs(I mean only you & me)....are "nuts". Believe me, I am such a "groundnut" fan !Besides, all that you have mentioned, I chop & sprinkle on cucumber raitha & potato raitha, definitely in particular. I use it as a crunchy topping for all salads - that is the only way, I can "push in" salads. Mix nuts with chopped onions, green chillies, coriander, add salt & lemon juice - best instant snack. It is a must for sago khichdi, aval usili for me. Oh,AC, I can't stop ! But all said & done, my dietician says they are laden with calories. So, just mind the no: of nuts you drop in your dish ! | | Dear AC...Even I m a bit of "nutty"...Tamarind rice without nuts is incomplete...will never make it if the stock of nut is not enough for that. And what abt peanut butter....I can always have it with bread slice. Besides all this...I can keep on munching plain roasted peanuts on and on....and stop only when my jaws ache.... |

| | Hi AC, Count me as another fan of these nutty nuts......... I wish to add these in everything like you do......but the other 50% of my family member (indirectly my hubby dear) never like too much nuts as he is a fitness freak and believe that eating too much nuts means adding too much calories.......as oil/fat to our diet.......so I prefer to munch these now and then and not only eat peanut but any kind of nuts like chestnut.....sunflower seeds......pista......cahew nuts.......etc....... Now I am planning to try some of your recipes with nuts....... Good going with nuts........... |

| | Me too, am nuts about nuts. My husband calls me 'monkey' since I munch on peanuts and bananas. I buy raw peanuts and roast them myself sans salt or oil. And pop it in almost every dish I make. I recently tried making caramalised almonds at home from a Jamie Oliver recipe and it came out very well, considering I am not lucky with baking. I am trying that out with peanuts soon. good to meet kindred nutty souls here! |

| | Peanut butter .oh the possibilities..thanks for bringing it up dear Saraswathi..It is also a very essential ingredient in my Thai cooking..If you have ever tried the peanut butter dipping sauce?? I agree cannot make tamarind rice if stock of nuts is low..but then again when is it ever low..I usually forget more important ingredients but never forget to stock up on nuts.. |

| | The Other half?? nice way of saying in the other 50 percent of family members..ROFL..v.v.good..so you are nutty as well. I have to agree that it is high in calories though i temporarily forget about it..Do try them sprinklled in top of salads or pachadi or any rice item coarsely chopped better..do make chutneys with them..these days my basic coconut chutney has more nuts assorted bell pepper than even coconut.. |

| | Caramalised Nuts..that should have been the heading..you're making my mouth water with just the name..anything caramalised is ofcourse a treat..J.O. is great and his style is unique..so is Tyler..I have tried almonds, pecans, for this..to me they are the better choice to be caramelsed. We get to buy honey raosted peanuts too..The roasted peanuts i buy is roasted without oil and salt..I am glad you didnt bring up the calorie content..so you are called MONKEy eh?? very very interesting.. |

| | Dear AC, I am a great fan of groundnut right from my childhood.Enga veettukku oru porikarar used to come.During weekends i will be the first to buy groundnuts and pori,then mix them together and have a good time eating it.There used to be a fight between me and my sis to eat that.Now i too have started using them in cooking.Nice blog...............enjoyed reading it. |

| | Hi Anandchithra Wow so many going nutty can add me too I too add nuts to many one which is favourite in the house is make batter of besanflour add salt and red chilli powder and chat masala and dip the nuts into it and deep fry it a quick and yummy snack. Want more can give you, very handy in giving thickness to the gravies. |
