coconut milk rice with veggie.....

1/4 onion
a pinch of green chilli
little ginger garlic paste
any one veggie of ur choice ( carrot, beans, peas, cauliflower)

to a pan fry ghee... add little methi seeds, pudina leaves... now add onion,ginger garlic paste and the veggie fry nicely...

IN a bowl soak the rice and keep it aside... to that soaked rice add 2-3 spoons of coconut milk powder... now add the fried ingredients...

cook it along with rice...

You can find coconut milk powder in Indian stores, Raj...

It is the dry from of coconut milk; same as to milk powder from milk.

carrot soup...

1 carrot
1 tomato
1 garlic
1 spoon butter
2 spoons of mixed nuts powder

cut all these into pieces saute in the butter nicely... keep it in the pressure cooker and give 3-4 whistle... when it cools grind it in the mixie... add nuts powder and allow it to boil for some time add pepper and salt to taste..... it will be yummy... she has is separately and even with white rice also....

btw...
instead of carrot u can replace any veggie but only one veggie so that it tastes good...

ya u r rite vanathi... i'm not sure whether they get fresh coconut in US... so left to the reply of oviya...actually fresh coconut milk tastes better...

when you say "nuts powder", what is this? do u get these in shops or hv a standard mix made urself at home? i ll try carrot soup this weekend.

HI asha

i made it myself... equal amount of cashew, badam and pista... slightly kept on the dosa tawa which is hot... i grinded it in the mixie and stored...

i used to add to most of the foods she has... like dosai, aapam, chappati, soups etc... coz she dont eat nuts...

(nuts powder idea was given by latha)

Thanks Oviya and Vanathi. I do use coconut milk in some of my recipes, but they come out of a can. I guess I can try using fresh shredded coconut for Riya.
