My kid doesn't like to eat chappati or rice. he used to like pancake a lot while we were in U.S Is pancake mix available in India? If not please suggest any substitute?
Hi Gankita, I saw betty croker Pancake Mix while on a visit to India ....i guess it must be available in selective stores or you could check it online also. In case if its not available...you could make a homemade batter using a receipes available on youtube.I do not want to promote any video here but there are many its easy to make it at home. Even in U.S. I did not use store bought pancake mix. Pancake batter can be prepared easily at home. You can make healthy choices while choosing the ingredients too. A quick search of pancake recipes in Google would give you number of ideas.

[FONT=sanchez, trebuchet ms, lucida sans unicode, lucida grande, lucida sans, tahoma, arial, sans-serif] [/FONT] 1 cup white whole wheat flour 2 teaspoons baking powder 1/2 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg 1/2 teaspoon salt 1 large egg 1 1/4 cups milk 1 tablespoon brown sugar 1 tablespoon vegetable oil 1 cup boiled sweet potato or pumpkin puree [FONT=sanchez, trebuchet ms, lucida sans unicode, lucida grande, lucida sans, tahoma, arial, sans-serif]Mix the above ingredients in blender. Adjust milk quantity as per desired thickness . [/FONT]
Pancakes are easy to make. There are basically two kinds: the thick (american) ones with baking powder (or baking soda) and the thin crisps one (crepes) without baking powder. Here is my recipe for the thin ones that my kids love: Half litre (ca 2 cups) of milk 2 eggs Half teaspoon of salt 1 tbsp of sugar 2 dl (slightly less than a cup) of wheat flour 2 teaspoons of oil Mix all ingredients together and let rest for about half an hour before frying. Serve with jam, fresh berries, ice cream or whipped cream.
@gankita My version of eggless pancakes 1 cup whole wheat flour (atta) 1 teaspoon sugar 1 teaspoon cinnamon 2 teaspoon baking powder 1 cup whole milk 1 tablespoon vegetable oil 1 tablespoon water 1 teaspoon vanilla extract Combine dry ingredients and mix slightly. Add milk, oil, water, and vanilla. Whisk together until just combined. Be careful not to over mix - it should still be slightly lumpy. Set aside to rest for a few minutes.Heat a large skillet over medium-high heat until hot. When pan is hot, with a measuring cup or ladle, pour 1/4 cup of batter into the skillet for each pancake. Cook until bubbles form on the surface. Carefully flip pancakes with turner/spatula and cook until golden brown. Modified from a recipe in cooks.com
