Let us learn to make pizza at home. Pizza - I Dough : 2 cups maida 2 tsp fresh yeast ¼ milk oil, salt to taste Ferment the yeast in a slightly warm mixture of water and milk ( ½ cup) with 1 tsp sugar. Make a fairly elastic dough with the maida, fermented yeast mixture , 2 tsp oil /butter and salt to taste. Let it rise to double its volume in a cool dark place. Mix the dough again and leave to rise. Topping : Traditional : In oil, fry 2-3 garlic finely minced,2 onions finely chopped ,1 capsicum finely chopped, 4-5 tomatoes finely chopped till it becomes a mass. Add salt, chilli pdr,and 1 tsp sugar(if desired). Tandoori: To the above add corn, and paneer pieces and add little methi pdr and garam masala. Take a pizza pan. Smear with oil or butter. Spread the dough and spread the topping over it. Sprinkle cooking cheese over the topping.Heat the oven to 240 deg ,place the the pizza pan in it and bake for 15-20 mts.Remove when light brown – otherwise it will become hard. Home made pizza has a lovely aroma & is quite simple to make.

Fruited Shortbread - Serve this with tea. Maida - 200 gms Powdered sugar - 140 gms Butter - 120gms Baking powder - ½ tsp Cardamom powder - ½ tsp Cashew nuts - 25 gms (powder ) Sultanas - 50 gms Desiccated coconut - 25 gms Vanilla essence - ½ tsp Sieve flour & baking powder together. Cream butter & sugar till light & fluffy. Add essence & cardamom powder. Add cashew powder & cream again. Mix all other ingredients at one time & make a soft, smooth dough. Form small balls, flatten them & press lightly on top with a fork. Bake at 350 degrees F till golden colour. Makes 30 numbers.
Tips for measurements Dear Chithraji: I am so eager to try out the shortbread recipe but I am stuck with the measurements. How do I measure 25 or 50 gms? I know very well that baking is all about measures and approx may not work. Do pass on your tips as to how to go about it? Thanks Seetha

Measure by volume. Dear Seetha, When you buy a 100 gm packet, measure the volume & suitably adjust it. Without a weighing scale, I can't suggest anyother method. Regards, chithra.
