    Nutty Banana muffins - I learnt this in my MW demonstration class

    Butter - 50 gms

    Brown sugar - 1 cup (or powdered sugar)

    Ripe medium bananas - 2, mashed

    Walnut or cashews, chopped - ½ cup

    Milk - ½ cup

    Vanilla essence - 1 tsp

    Cardamom powder - ½ tsp

    Sieve together:

    Maida - 1 cup

    Baking powder - ½ tsp

    Cooking soda - ½ tsp

    Preheat oven to 180 degrees.

    Cream butter, sugar, mashed banana & nuts.

    Add sieved mixture & dilute with milk.

    Grease muffin cups with ghee and fill the cups with the mixture and bake for 15 mins at 180 deg C.

    Makes 25.

    Are you using the new muffin tin?

    The muffin kesari looks yummy and looks like a party dish. Will try and give FB,
    Also can I use half of the ingredients given by you, if not it wil be wasted:-(

    Dear Vijee,
    Last evening, I inaugurated the loaf tin. Tomorrow I plan to use the muffin tin.
    For muffin kesari, you can try with half the amount because there is no baking powder in that recipe.

    Chocolate Nutties - very delicious!

    Butter - 170 gms

    Sweetened condensed milk - 400 gms tin

    Cashewnuts, chopped - 170 gms

    Maida - 170 gms

    Milk chocolate - 1 slab

    Vanilla essence 2 tsp

    Cream butter & add condensed milk & essence

    Stir in sieved maida, chopped cashews, chopped chocolate & mix to a dough.

    Form spoonfuls of mixture into balls, flatten slightly & put on a greased baking sheet.

    This spreads very well, when baking.

    Bake in a slow oven 325 deg F for 20-25 mts till golden brown & crisp.

    Makes 40 - 50.

    Condensed Milk Cookies - soft cakes!

    Butter - 170 gms

    The last photo - muffin tin & paper cups are from S'pore. I carried them neatly packed to all houses, I went for Navarathri. It lasted full 10 days, very well.

    Oats-Date Cookies - Low Cholestrol, please!

    I tried this with 1 tbsp olive oil & 2 tbsp skimmed milk. One can use anyother odourless, refined oil. You can also use ¼ cup butter (melted) to knead the dough and reduce the milk.

    Whole wheat flour - ¼ cup

    Oats - ¾ cup

    Finely chopped dates - ¼ cup( mince if you prefer)

    Brown sugar - ¼ cup

    Oil - 1 tbsp

    Milk - 2 tbsp (or less)

    Vanilla essence - 1 tsp

    Knead all ingredients together.

    Divide into 10 balls.

    Spread a butter paper on a baking tray & grease it.

    Arrange the balls evenly & press with a fork to slightly flatten them.

    Bake at 180 deg C (375 F) for 18-20 mts.

    Remove & gently peel from the paper.

    Allow to stand on a net for 10 mts.

    Eggless Chocolate shortbread - makes 3 dozs.

    I used the Food processor for this. Can be done without FP also.

    Maida - 1 cup

    Castor sugar - ½ cup

    Cocoa powder - ¼ cup

    Butter - ½ cup (1 stick or 120 gms)

    Salt – a pinch

    Vanilla essence - 1 tsp

    White chocolate grated - for topping (optional)

    Preheat oven to 300deg F or 160deg C.

    Pulse flour, sugar, cocoa powder, and salt in a food processor to combine.

    Add butter and vanilla, and process until mixture comes together.

    Shape the dough into a ball.

    Roll out dough on a lightly floured surface to 1/4 inch thick; cut out shapes with a cookie cutter.

    Space 1 1/2 inches apart on greased baking sheets.

    Bake cookies until firm to the touch, for about 20minutes, till a nice aroma comes..

    Let cookies cool completely on wire racks.

    The following is optional.

    Melt white chocolate, stirring, in a heatproof bowl set over a pan of simmering water.

    Drizzle chocolate over tops of cookies.
    Let set before serving, about 30 minutes.
    Cookies can be stored in a single layer in an airtight container at room temperature .
