Default Hello Jay !

Please note that I have posted a special Punjabi Garam Masala in the miscellaneous thread - that adds to the flavour of the Punjabi dishes, there is no denying it !
Thanks for the feedback.

Dear Micro Soft/Wave mami,

I got down to trying the Moussaka. Just finished a sumptious lunch with the maduraikarar....and eating a baked dish was a first time for us at home....and of course needless to say with all his kindal and galatta , the dish was finished and he was the first one to comment that ellam poyae pochu!....
So madam thanks once again that you have inspired in me the art of cooking and that too cooking well! Like all the others i am also taking a lot of interest again in being in the kitchen...you may not believe it but i had my laptop open on the kitchen center table and i kept referring to the recipe....that's what u have done to us!

Will keep you posted at my next attempt...i am getting late, now i need to rush to ur recipe index and start taking notes...ha ha....

Default Sudha, First trial with baked dish & that too moussaka !

My God, Sudha, I can't believe ! That " ellam poye pochu" only shows your calibre as a cook !
Ok, with a Maduraikarar at home, please try " masal mochai" in the shakambari thread, but with potato ( if he is not a Jain, like mine ! ). He is bound to become nostalgic about the " masal kizangu", the famous Madurai dish sold around Meenakshi temple, in all " bakshana kadais", specially Nagapattinam Mittai kadai, which is an " enga ooru special' !
Thanks for " patronising" this forum !
Love & regards,
Chithra.

But will try masal mochai and will asathify ....

But tell me one thing ...why are u Jain, i mean is there some reason to give up the onions and a whole lot of veggies...and isn't it difficult then when u tryout these recipes with all the non jain veggies etc. How do u do it?

Default Not I, but Sir & his family don't touch onions !

Hello Sudha,
When I entered my in-laws house as a bride, I was shocked to learn that as a family , they had a " mental block" against ( only) onions. Garlic was not used so much then, till the " onslaught" of N I cookery ! I was scared to even mention to them that I was brought up on a routine of " Sunday samayal - chinna vengaya sambar + potato roast! " . Well, enna pannarathu, adjustment thaan !
Ofcourse my children eat onions etc. So when cooking for only both of us ( that is on all days except Sundays), I am also forced to be a non-onion eater.
Anyway, that is all part of life !
Love & regards,
Chithra.

Default I tried palak paneer

Chithra amma,

I tried palak paneer - your version. I have earlier tried the version posted by Sonu_627 in north indian recipes thread.

Both version tasted yummy - thanks to you both. But my husband complained that the color was not exactly green, a little darker.

I used tomato puree from tin and boiled spinach in water for few mins and pureed it by running it in mixie.

I am tempted too much to try all your recipes with most of them displayed with colorful photos.

One request - earlier you used to hint like this goes well with rotis, this goes well with dosai, good combination for idli, etc.

Ippo yen solla mattengareenga? Especially the shakambari vegetables you post ... can you mention which ones go well with paruppu kuzhambus, which ones with rasams and the ones with vathakuzhambu or karakuzhambu. That will be added help!

Malar

Default Malar, romba naalaa kanome, nallaa irukkeengala ?

Dear Malar,
As soon as you drop the palak leaves in boiling water, you should switch off.
Only then the colour will be retained - this is important.
Since the " in-thing" is " mix n match" ( ?), i don't write the combinations, now ! I shall start it again !
Love & regards,
Chithra.
