Pickles that Tickle and Preserves to Reserve !

    Mango Ginger - Instant pickle.

    This is also called “mangai inji”.

    Thin slices of mango ginger - `1 cup

    Green chillies - 4,5 – chopped

    Lime juice - 3 tsp

    Salt

    Oil - 1 tsp

    Mustard seeds - ½ tsp

    Wash, scrape & slice thin.

    Mix all ingredients & temper as given.

    This can be used immediately.

    Orange peel thogayal - spicy - katta – meeta taste.

    Select bright orange peels, wash well & chop into small pieces.

    Chopped peel - 1 cup

    Oil - 1 tbsp

    Red chillies - 5, 6 ( to taste)

    Mustard seeds - ½ tsp

    Urad dhal - 2 tsp

    Hing - ½ tsp

    Salt

    Jaggery - to taste ( optional)

    Tamarind paste - 2 tsp

    Heat oil & fry mustard seeds, urad dhal & red chillies.

    When done, add chopped peel & fry for 10 mts on a low fire.

    This is important to decrease the bitterness.

    Remove & grind all ingredients together to a chutney.

    Goes well with dosai, thayir sadam etc.

    By making it more spicy, this can be preserved inthe firge for 2 weeks.

    Dear Chithra Madam

    :icon_frown: How can I abandon you and your forum?No way.

    It's just that I don't try out any new recipes these days because I am trying to reduce weight:yes: .

    Once I become real skinny,I will start trying out all your recipes again.;-)

    Dear Chitra mam,

    Can i have the recipe for chicken pickle? I have had a rough time to make that. I am just wondering that if u ever try the recipe before kindly post this 4 me or show me the thread in this site ( I tried but :idontgetit: )

    Honey Amla - this recipe includes sugar & honey.

    Select ripe amlas.

    Amlas - 2 cups

    Sugar - 2 cups

    Honey - ½ cup

    Edible camphor - a tiny pinch

    Saffron - ¼ tsp ( warm & powder)

    Wash & dry amlas.

    Bundle them in a thin cloth & tie.

    Allow plenty of water to boil in a broad vessel.

    When the water boils, put the bundle in boiling water & boil for 5 mts.

    Switch off & remove the bundle.

    Open & cool the amlas.

    Poke all over the surface of amlas with a clean thick needle.

    Make a syrup with sugar & 2 cups of water.

    When it boils well, add 1 tbsp milk.

    Allow vigorous boiling when dirt will start floating.

    Strain to get the clean syrup.

    When it becomes sticky ( ½ string), add amlas.

    Boil till one-string is reached.

    Add honey & spices & allow to boil a little more.

    Remove, cool & bottle.

    This can be eaten for its own medicinal value and also as a side dish with parathas & a spicy sabji!
