One more question Chitvish Ma’am, u says we should very well roast the rava, should we roast it until it changes its color? Or if you can please spacify for how long should we roast it?

Hello my dear Chitra ma,
How r u?Hows ur health?
Actually I'm planning to make some bajji mix for future use.Saw the procedure...Now my queries:
1)Can i wash them once and fan-dry it before sending to the mill?
2)Once ground, should i do any preservative steps like roasting or keeping it in fridge to keep it from getting spoiled?
Thanks in advance
Bye & take care
Bindhu

Dear Shilpa, Welcome to my forum.
Rava is sooji. As soon as you buy it, roast dry on a tava till it becomes very hot & switch off the stove. Once cooled, store it airtight. No refrigeration is necessary.
Do not confuse rava or sooji with anything else.
I will be happy if you get hooked on to our forum!!
Love,
Chithra.

Dear Bindhu,
I am fine - thanks for your concern!!
No need to wash at all. Just sun-dry & send.
Keep it airtight, not necessary to do anything else.
Love,
Chithra.

Latha, I have never tried adding coconut to aappam batter. I will look into my old recipe books & if any, I will get back to you.
Love,
Chithra.
