Dear chitra,

Hi, how r u? past few days I've been trying few recipes of urs. It all came out well and I've become a die hard fan of ur recipes.

now I've a couple of queries. First can u tell me a recipe to make health friendly burger without any patties. secondly how do we make a typical traditional aviyal as how keralites make and what all veggies do we hv to add. Kindly help me with this.

Dear Pooja,
For a healthy burger, makevegetable cutlet incorporating lapsi (like upma) & use brown bread buns.
Traditional aviyal differs even in Kerala, believe me.
Main vegs are, white pumpkin, chenai, snake gourd, drumstick, avarakkai, clusterbeans, green banana, brinjal.
Palghat people use yellow pumpkin.
Thanjavur people include seppankizangu.
Now we all use carrot, beans, potatoes also.
Palghat people use only sour curds, no tamarind.
Trivandrum people use only tamarind, no curds.

Dear chitra mam,

read your recipe for navaratna paruppusili. Love to taste it. before that i have a doubt, say i'm making that dis with just one vegetable like beans or kothavarangai should i add all the 4 dhals compulsorily? Are all 4 included in the basic recipe or just the bengal gram alone? likewise you have mentioned to add urad dhal, currently i dont have mulu uzhundhu so can i substitute with udaitha uzhundhu; if so should i double the quantity of udaitha uzhutham paruppu? Sorry if had confused you, awaiting your reply. Thanks.

You have not confused me - it is yes to all queries!
The vegetable can be just one; the addition of 4 dhals gives an extra softness, I feel. Yes, you can add halved Ulundu also, no problem. After all we are going to grind it.No doubling is necessary.

Thanks for ur reply.
I tried the burger without cutlet but just adding raw veg and low fat cheese slice. It came out very well.My brother does not beleive when I say that there is no one method for avial. he says there has to be one traditional method and we all customize it.
I w'd loke to know how the red gravies in hotels are thin and smooth and tastes so good. when I try at home it is so good. Pl. help me.
