By shaker I mean an airtight tumbler or jar like, in which we can vigorously shake to get uniform consistency, without spilling - kulukkarathu!

Hello chithra ma'am,
I have a query regarding water measurement for rice dishes.Most of the time during gettogether or parties the rice dish is either undercooked or over cooked..spoiling the taste.Some times its correct.If i try the same proportion next time..it comes out different.Can u give basic guidelines for rice types like basmati,jeeraka samba.Also if basmati is soaked should we change the proportion of water..?

What is the exact way of making 'keerai-pulippu'. The one without sambar-podi or paruppu ?

Dear Supriya,
It is very difficult to generalise because the rice that we get in India & the one in US are very different.
For old ponni, we use 1:3
For basmathi & jeeraka samba - 1: 11/2 -2
I think, you can try first with the lower side measurements, so that it will not become mushy. If it is too grainy, sprinkle little water & cook again. This has to be followed only by trial & error.
