Dear Latha,
For butter icing it is always 50 gms butter to 100 gms icing sugar.
For cream, it varies with the quality.The thickening on refrigeration determines this.
Roughly 2 tbsp powdered sugar is enough for 1 cup of cream.Generally cream is whipped with powdered sugar till soft peaks form.

I am so tempted to make Idiyappam. But the process seems to be a little tedious. I have a quick question.

Can I make it was Rice flour available here.

Dear GK,
Try it like how we make outer mavu for kozakkattai.
Boil 1 1/2 cups of water with salt & a tsp oil.
Reserve 1/2 cup, lower the stove, add rice flour in one stroke, whisking simultaneously. Add more water if necessary. The dough should be lump free & soft. Make idyappam with that.
