Dear chithra, Pls can u give me the propotion for butter and icing sugar for icing the cake and propotion of fresh cream and icing sugar also. thanks, lots of love, latha

Dear Latha, For butter icing it is always 50 gms butter to 100 gms icing sugar. For cream, it varies with the quality. The thickening on refrigeration determines this. Roughly 2 tbsp powdered sugar is enough for 1 cup of cream.Generally cream is whipped with powdered sugar till soft peaks form. Love, Chithra.

Hello Mrs. Chitra I am so tempted to make Idiyappam. But the process seems to be a little tedious. I have a quick question. Can I make it was Rice flour available here. Regards Gayathri

Dear GK, Try it like how we make outer mavu for kozakkattai. Boil 1 1/2 cups of water with salt & a tsp oil. Reserve 1/2 cup, lower the stove, add rice flour in one stroke, whisking simultaneously. Add more water if necessary. The dough should be lump free & soft. Make idyappam with that. Love, Chithra.

Hello Mrs. Chitra Thanks for the instant reply. Will try and let you know. Regards Gayathri.
