| Dear Mrs.Chitra I would like to know if you have any recipes or ideas with Kiwi fruit. I have a box of Kiwis not knowing what to do. Also I have couple of pears, do you also have recipe for those. I was thinking if the apple crumble recipe can be substituted with pears. But of course would like to know your ideas . Thanks Geetha |

| Dear Geetha, I add kiwi segments in raithas - it is lovely ! Particularly, it goes well with boondhi raitha. Yes, use pears instead of apples for crumble. It will be very nice. Both can be used in veg-fruits salad as well, with tiny cubes of paneer thrown in ! Love, Chithra. |

| Dear Priya, This was given by me in one of my reply posts. I repeat here, the same: The following can be taken in equal weight Whole green moong Ragi Maka cholam barley wheat or wheat rava almonds (optional) cardamom (if you plan to have with milk). Each item must be roasted individually in a dry kadai till brown. Pottukadalai can be directly added. Cool & powder. Mix 1 tbsp with 1 cup water & boil, stirring continuousy till it boils. Remove; add milk & sugar or jaggery or salt & buttermilk. Love, Chithra. |

| DEAR CM UDHAYAM GHEE WHICH I BROUGHT FROM CHENNAI IS OVER. THE GHEE AVAILABLE HERE IS LIKE A PASTE AND NOT NARA NARA HOW WE SAY IN TAMIL. EVEN MY 1YEAR BABY IS ABLE TO IDENTIFY THE DIFFERENCE BETWEEN THE CHENNAI MADE AND SAUDI MADE. CAN U PLEASE HELP ME IN THIS REGARD. | Dear SB, Here we go, to make ghee from butter: Buy butter, which is as free from moisture as possible (to prevent splashing). Transfer it to a wide mouthed vessl or kadai. This is important. Heat this on the stove, stirring occasionally. It will get "transformed", gradually. At once stage, the colour will turn golden & the entire mass will foam up & rise to the top with an aroma. This is the right stage, Switch off and wait for 2-3 mts. The foam will go down & you will see a honey coloured residue. Keep a metal container ready and strain into it immediately - be very careful. Only immediate straining gives a grainy textire. Cool completely before you close the container. SB, please try & write to me. I will post this in Tips thread.I am posting 2 photos. Love, Chithra. |
