| Dear Durga, Shop bought ghees are likely to have a dash of adulteration with some other fats. So long as the flavour is good, do not bother about the colour. The markazi naivedyam is only pongal. On 24 th Thiruvathirai falls - I have already given kali. On the 27 th day of markazi, sakkaraipongal is offered as naivedyam. I hope you have seen my thread on Markazi - the month of kolams, I started last year, specially on the request of Aishu ! If you are Durga, how will you not feel close to Chithra? Once upon a time, in our small town of Madurai, Chithra-Durga duo was popular !! Love, Chithra. Quote:

Blend grated vegs - fruits with water, either jaggery or salt & pepper, Strain. Try to make fresh. Love, Chithra. |

| Dear Saraswathi, Black jeeerakam is not kalonji. It is either usual jeera or shajeera. For which recipe are you searching for it? Love, Chithra. |
| ||||
| Yes Mami, I know kalonji is not black jeera...I guess its onion seeds. Hope u would recall that a few days back I had asked about home remedy for piles. One ILite had given tips in which one was mentioned using black jeera. That caught my attention. I had read somewhere before that 2 spoons of jeera and blackjeera when roasted slightly in ghee and then added to basmati rice and then cooked, gives a good flavour. So started the search. Bye |

| Dear Mrs C How are you doin ? Could you please post a recipe for thengaipal for aappam using jaggery or vellam . Thanks a lot . Regards Prethi |

| Dear Saraswathi, In this case, it is definitely Shahjeera - it is less than half the size of regular jeera & gives a very good flavour to rice. Love, Chithra. Quote:

| Dear Prethi, For thengai pal for aappam Take 1 heaped cup freshly grated coconut, add just 1 1/4- 1 1/2 cups of slightly warm water & put in liquidiser. Strain. Add sugar or crushed & powdered jagery. Mix thoroughly till it dissolves. Serve straight. No need to heat since it is likely to break. I like it best with karuppatti - palm jaggery. Believe me, y day I ground for aappam. I plan to make both paniyaram & aappam with that. I bought 2 new - iron cast as well as maakkal paniyara chatti from Madurai & I am waiting to use them !! Love, Chithra. |
