Hello Mrs.C,
Today, made idly with idly rice; normally, makes with ponni boiled rice and the result use to be excellent. But, with this idly rice, am not very happy as the texture is not that soft, pls tell me what to do?
Also, let me know which is always better or you use to make idly, idly rice or boiled rice?

I wonder what made you change the rice when the results were excellent with ponni rice !
In Chennai, we get for idli, 3 varieties
Khar arisi
Venpuzungal
IR 20 idli rice
I use the last one & my idlis are very fluffy. Since I do not know the availability there, I can't say.

Good question, Mrs.C..Name itself is idly rice..
It was just that had dosa at my friend's place where it was extremely crispy. So, thought of trying it as tried once years back, but dont remember how it was.
Maybe shd use it hereafter for dosa and use my good old ponni for idly.

Yes you are right . I was not satisfied with the idlis prepared from idli rice available here in US . I always use a combination of ponni pulungal(3 cups) and ponni pacharisi(1 cup) with 1 cup urad dhal and a little poha with little fenugreek seeds.

I make idlis with idli rice these days. My proportion is 5 cups idli rice, 1 cup aval and 1 cup urad dhal and 1 tsp methi seeds. Then it comes very fluffy and super soft.

1. can u pls giv me the link for grinding the batter with idly rava available at stores. i saw it somewhere hence i bought fm store, but now i cud not find it. proportion plss.
2.in almost all the recipes fr rasam, u say it shd be cukd for 1 whistle. does that mean, close the cooker put the weight immediately and keep in medium flame for the whistle or u hav to wait for the steam and the put the weight and wait for the whistle. can it be done in the stove top.
FBs: made small onion sambar, pasiparuppu dosai with puikuzhambu, easy kuzhambu, khara bhath. all turned well. i wish i shd try more but my 13 months old daughter varsha keep me busy running after her throught the day. so i always end for recipes in jiffy cooking. shd try to have other recipes soon.

Dear Priya,
I have not posted the recipe, but just described it in a post.
For grinder use 4 cups, for mixie use 3 cups of rava. Mix with warm water & keep for 30 mts minimum.
Grind 1 cup urad very fine, at the end add soaked rava, salt & give one run. Ferment as usual & make idlis.
For 1 whistle rasam, keep the rasam inside the cooker; close with lid, when steam starts escaping put the weight. Switch off when the first whistle comes. Cool & open.
I know it is not easy to cook with a toddler running around !
