Thank you for mor sambar recipe. In last many days, I have made many items. Punjabi dal, veg makhanvalla, masala crispies, panna (very nice). Some items now I do not remember. But I remember every taste super. I am now queen of kitchen. All thanks to you. Whole day sitting and typing slokams and recipes for us. Very kind. Really, I like your special slokams more than recipes. One item I wish to ask is perandai thogayal. Thatha wants to eat that. Another question, where can I buy perandai? Pls dont forget my other requests also.

Thankyou for the feedback. Sorry for the delay - I wanted all tips from my mother for perandai thogayal. Perandai is best " home grown" & plucked, since it has to be extremely tender - otherwise it will create an itching sensation in the tongue.
Remove the fibres completely - this is the most important step. The chop into small cubes. In little oil, fry red chillies, urad dhal, hing & lastly add the perandai pieces. When they are well sauted, remove & grind with tamsrind & salt like other thogayals.

Default How to select good raw mangoes?

Dear Mrs.Chithra,
Seeing all the Mango recipies make me want to try it.Is there a way to select good mangoes or does it matter at all?

Default It is a tough query !

My knowledge extends only to the variety available in South India ! Select a variety which is medium sour -only that gives the correct taste. In south we use Bangalore variety or kilimooku.

Here in the grocery shops they have only one variety available.No clue about what variety either.I guess it all comes down to trial and error!

Dear Mrs.CV,

I want to know how to store betal leaves(vettrillai)in the fridge. Since i dont get betal leaves quite often in my place i would like to store this atleast a month.

Default One month - I wonder !

Dear Vidhu,
Wipe compltely dry with a towel or tissue. When perfectly, dry store in a plastic box. But it will stay for maximum 10 days & thereafter start " fading".
I do not know about the weather conditions in your place, though !

wow, thanks for your instant reply. Thw weather is going to be somewhat is 50 dergees farenheit. As per your advise to prepone the periods using betal leaves i got 25 of them. Anyway i will try this, also i want to translate the english slokas to tamil and take a printout. Can u pl. tell me how to do that
