Dear Sowmi,
Next, when you have guests, make one type each & ask them
Ithu mattum pOruma?
Innum konjam venuma??
If they say yes, make coriander paratha type by rolling like a cigar!!
Your enthusiasm makes me very happy.
Love,
Chithra.

Dear Padma,
You have been "threatening" to come home for quite some time, but it has not happened!
So, I now really think, if you are feeling "threatened" !
Love,
Chithra.

Dear, dear Kamla,
Sending you parathas? Why not?? Any time - I am at your disposal!!!
If only wishes were horses!!!
I tried all these with the dough for palak-red pumpkin parathas, but can be tried with plain dough also!
Love,
Chithra.

Dear Chithra,
you have shown a good way to escape when the shape of the paratha ditches, we can tell the family that it is a new shape taught by our Chitvish-the family will nod in delight and gobble up the parathas, even though they are in oddest of odd shapes. You rock, my dear.

Default Envelope Paratha - 1

Mix equal volumes of wheat flour and maida so that the rolling can be done very thin.

Otherwise, if thick, the cooking may not be perfect.

Knead the dough by the usual method & rest for 30 mts.

I mix little maida with water to make a paste and apply alround the rolled chappathi just to make sure, the filling will not come out halfway.

Follow the photos.

envelope 4-s.JPG

When putting on the tava, the open edges should come on the bottom first.

Oil must be definitely used.

The next 2 photos will follow in the next post.

I will post recipes for envelope parathas.
