    Dear Friends!

    Can you please tell me how to cook Millets correctly ?

    On Sunday, I cooked Kudiraiwali rice. for 1 cup of rice I added 3 cups of water with 5 whistles. It became very soft and mushy. I wanted to make Pulav rice out of it and ended up with Rasam rice and Curd rice.

    KUTHIRAIVALI VEGETABLE PULAO
    Preparation time 15 mins | Cooking time 20 mins | Serves 4 to 5

    Ingredients


    • Kuthiraivali - 2 cups
    • Water - 4 cups
    • Coconut milk - 1 cup
    • Beans - 12 chopped
    • Carrot - 3, chopped
    • Peas - 1/2 cup
    • Potato - 2, cubed
    • Onion - 1 medium, sliced
    • Green chilli - 3
    • Ginger garlic paste - 1 tbsp
    • Garam masala - 1 tsp
    • Cumin powder - 1 tsp
    • Mint leaves - a handful
    • Lemon juice - 1 tsp
    • Coriander leaves - 2 tbsp, chopped
    • Salt - to taste


    To temper


    • Oil - 2 tbsp
    • Cinnamon stick - 1 inch stick
    • Clove - 4
    • Bay leaf - 1
    • Cumin seeds - 1/4 tsp
    Method
    1. Wash and soak the kuthiraivali for 30 mins. Chop all the vegetables and set aside.
    2. In a pressure cooker, add oil. Once the oil heats up, add the cinnamon stick, bay leaf, cloves and cumin seeds.
    3. When a nice aroma emanates, add the sliced onions, salt and green chillies. Saute until the onions turn translucent.
    4. Now add the ginger garlic paste. Saute until the raw smell of ginger and garlic leaves.
    5. Add the garam masala and cumin powder. Mix well. Add the mint leaves (I had only mint paste hence used that)
    6. Add the chopped vegetables. Mix everything well together.
    7. Add the coconut milk. Allow the vegetables to cook for a couple of minutes.
    8. Drain the kuthiraivali and add it. Add the lemon juice. Mix in and check for salt.
    9. Add the remaining 4 cups of water and chopped coriander and cook only 2 whistles, simmer after the first whistle.
    10. Once the pressure releases, open the cooker and enjoy!

    This millet is also good for curd rice, pongal, upuma. Hope that helps!
