Default MW Paneer Bhurji - quick snack with toasted bread!

Home made paneer is very good for this.

Grated paneer - 1 cup

Chopped onions - ½ cup

Chopped capsicum - ¼ cup

Ginger & garlic, minced - 1 tsp, each

Green chillies minced - 2 tsp

Black salt - ¼ tsp

Chopped mint & coriander - 2 tbsp, each

Lime juice - 1 tsp

Salt

Oil - 1 tsp

In a MW bowl, combine oil, onions, ginger, garlic & mix well.

MW Hi for 2 mts.

Add capsicum, green chillies, haldi, black salt & MW Hi for 2-3 mtes.

Add all other ingredients & mix well – no need to MW again.

Serve hot on toast.

Default MW Jiffy Tomato Thokku: - make it as often as you like!

The spice level is your choice. If you want to make larger amount & keep for some days, make sure you add enough oil.

Tomatoes - 4 (select bright red ones), chopped

Tamarind - tiny lemon size

Chilli powder - 3 tsp

Salt

To temper:

Oil - 1 tbsp

Mustard seeds - 1 tsp

Hing & methi powder - each ½ tsp

Chop tomatoes, shred tamarind & mix with red chilli powder & salt in a glass jar.

Allow to stand for 24 hrs.

Grind to a fine paste & take in a shallow MW bowl & temper as given.

Mix well & MW on Hi for 5 mts & medium for 15-20 mts.

Remove, cool & bottle.

Default MW Carrot Curry - tastes delicious, cooked in milk!

Select fresh carrots. Wash, peel & grate.

Grated carrots - 2 cups

Milk - ¼ cup

Coconut - 1 tbsp (optional)

Salt

To temper:

Oil - 1 tsp

Mustard seeds - 1 tsp

Urad dhal - 1 tsp

Red chilli - one, broken to bits

Curry leaves

Take carrots & mimilk in a MW vessel.

Heat a ladle on the stove & temper as given, to pour on carrots.

Cover & cook for 5 mts Hi.

Open, remove, add salt & mix well.

MW hi for one more mte.

Remove & add coconut & serve.

Addition of milk gives carrot a delicious taste.

Default MW Lapsi-Oats Porridge - ideal for breakfast!

Lapsi & Oats - ¼ cup, each

Butter - 2 tsp

Milk - 1 + ½ cups

Water - 1 cup

Sugar - ¼ cup (brown or white)

Cinnamon powder - ½ tsp (optional)

Apple + Banana - 1, each

Soak lapsi for 15 mts & drain completely.

Take a BIG MW BOWL (to prevent overflowing) & first MW the butter on Hi for 30 secs

Add oats+lapsi & MW Hi for 1 mte.

Add 1 cup each of milk & water & MW Hi for 8 mts, stirring 4-5 times, without fail.

Take out, add cinnamon powder, remaining milk & sugar when still hot.

Blend well for the sugar to dissolve.

Serve hot – but I find chilled & served, best.

Add chopped fruits.

Default MW Macaroni Cheese - the eternal delight, very easily made in MW !

Macaroni - 1 cup

Water - 1 ½ cups

Butter - 1 tsp

Garlic - 1 big clove, grated

Mixed vegetables - ¾ - 1 cup (cauliflower, peas, corn, French beans etc)

Milk - ½ cup

Cornflour ½ tsp

Cheese slices - 2 ½ no:s

Mixed herbs - ½ tsp

Freshly ground pepper - ½ tsp

Salt - to taste

To serve:

Cheese slices - 2

In a bowl, combine the macaroni, water, butter, garlic, vegetables and salt and microwave on HIGH for 8 minutes stirring once in between.

Combine the cornflour with 1 tablespoon milk and keep aside.

Add the cornflour mixture, milk and cheese and microwave on HIGH for 2 mts.

Add the pepper and mixed herbs, mix well and microwave on HIGH for 1 more minute.

Top with the cheese slices, leave aside for 2 to 3 minutes and serve.

Some macaroni varieties take longer to cook, depending on the brand and shape.

Default MW Lauki Basundhi - Takes exactly 8 mts!

Bottlegourd (lauki), grated fine - 1 cup

Sugar - 1/3 cup

Milk - 1 cup

Milk powder _ ½ cu[

Cardamom powder - a pinch

Ghee - 1 tbsp

Sliced pistas - to garnish

Squeeze out all water from the grated vegetable.

In a bowl, mix together, sugar, milk, milk powder & cardamom powder.

In a big MW bowl, mix ghee & the squeezed vegetable & MW Hi for 3 mts, stirring once after 2 mts.

Add the milk-mixture, mix well & MW Hi for 5 mts, stirring once in between.

Serve either hot or cold, garnished with nuts.

Default MW Chowchow Thogayal - no oil!

I used the food processor for mincing the ingredients & MWed Hi, covered for 5 mts.
Then ground on cooling. The photos are self explanatory.
Makes a jiffy side-dish for all tiffins.

Mince all ingredients in food processor.
MW covered on HI for 5mts, addinglittle oil optionally.
Cool & grind.

Default MW Sweet Potato Curry - one sweet & one savoury!!

This, we call,Halwa Curry & is strictly for the 'sweet-toothed'. This goes very well with spicy vatha kuzambu.
Slice (not necessary to peel), well cleaned sweet potatoes into roundels, not more than 1/2 cm thick.

Slices - 2 cups

Salt - a tiny pinch

Powdered jaggery & grated coconut - 1/2 cup, each

Ghee - 2 tsp

Steam cook the vegetables in MW on Hi for 6mtes.

Cool; meanwhile in a shallow vessel, mix jaggery & cocnut & MW Hi for 2-3 mtes till well blended.

Add the steamed slices, salt & MW hi for 3-4 mts, stirring twice in between.

Remove & top with ghee befoe mixing gently.

Savoury curry:

Scrub, clean & cut sweet potato into 2,3 big pieces.

Steam on MW Hi for 5,6 mtes - time varies with the freshness of the vegetable.

Cool & dice ( peeling is optional)

In a MW shallow vessel, take 1 tbsp oil & MW Hi for 2 mtes.

Add 2-3 red chillies, 1 tsp mustad seeds, 2 tsp uraddhal, a pinch of hing & curry leaves

MW on Hi till dhal browns.

Remove, add the cubes & salt.

MW for 2 mtes, after mixing well.

Garnish wth freshly grated coconut.
