Default MW Beetroot Halwa - no, no, no ghee !

Buy fresh, bright red coloured beetroots. Wash, peel & grate them.

Grated beetroots - 3 cups

Condensed milk - ½ cup

Milk - 500 ml

Sugar - ½ cup (more or less to taste)

Custard powder - 2 tsp

Cardamom powder - 1 tsp

Nuts - to garnish

Take a big MW casserole – this is important to prevent milk from overflowing.

Add beetroot & milk.

Cook open, for 20-30 mts, stirring every 3, 4 mts.

When almost the entire milk is absorbed, add condensed milk & sugar.

Mix custard powder with 2 tbsp of milk thoroughly & add.

Now MW the mixture on Hi for 5 mts, stirring twice in between.

Serve hot.

Hot beetroot halwa with plain vanilla icecream makes a great dessert !

Default MW Amla Thokku - to cut down on oil.

Select good, fresh blemishless amlas.

Amlas - 10

Green chillies - 10 (more to taste)

Salt

Jaggery - little (optional)

Oil - 1 tbsp

Mustard seeds - 1 tsp

Hing - ½ tsp

Steam amlas for 5 mts in a MW steamer & cool.

Remove the segments & grind fine with green chillies.

Mix salt & jaggery & keep ready.

In a MW, bowl, heat oil & mustad seeds on Hi for 2 mts.

Add the paste & hing & mix well.

MW on med for 7-8 mts or a a little more to get the desired consistency.

Keep in the fridge & use.

Very good as a spread for toasted sandwiches with a cheese slice.

Default MW White Chocolate Fudge - more delicious than sinful !

This is best stored refrigerated.

Grated white (cooking) chocolate - 1 cup

Fresh cream - ½ cup

Butter - ¼ cup (soft)

Icing sugar - ¼ cup

Chopped nuts - ¼ cup

In a casserole, mix & blend butter, sugar, fresh cream & nuts.

MW hi for 2 mts, stirring once in between.

Remove & add chocolate.

MW Hi for 1 mte.

Take out & mix well.

MW Hi for 1 mte.

Transfer to a greased tray & leave in the fridge.

Cut into squares after 4-6 hrs, when it has set firm.

Default MW Apple Chutney - Tangy, intriguingly sweet !

I made it in MW. One can make it on stove-top also, adjusting the flame to prevent burning at the bottom.
Sour cooking apples are ideally suited. If you use normal less sour apples, decrease jaggery to taste.

Large juicy sour cooking apples - 1 kg

Jaggery or brown sugar - 300 gms

Raisins - ¼ cup

Salt - 2 tbsp

Vinegar - 300 ml

Red chillies - 4-6

Red chilli powder - 1 tsp

Mustard powder - 1 tsp

Lime juice - 2 tbsp

Lemon rind - 1 tsp

Garlic cloves - 6 (chopped)

Onion - 1 (chopped)

Bay leaves - 4

Ginger powder - 2 tsp

Peel, core & grate apples.

Soak whole red chillies in vinegar & grind fine.

Crush jaggery.

Combine grated apple, vinegar-red chillies, jaggery, mustard powder, lime juice, rind, bay leaves and ginger powder in a MW casserole.

Cook on MW Hi for 10 mts stirring twice in between.

Continue to cook on hi till it becomes soft.

Add remaining ingredients and cook on medium, stirring frequently.

It must reach a jam consistency with a glaze on top.

Remove, discard bay leaves & pack into clean jars.

Madam,

I have a small request. Can you create a thread or index for microwave recepies only. I find it difficult to locate recepies in this thread. It will be easier for us to go to that particular recepie like in other indexex. Sorry for the incovenience.

Please tell how to roast appalam in microwave.

How did you miss it out?
Spread 2-3 appalams directly on the glass plat & MW Hi for 1 mte. You will have to learn the timing in your own oven by trial & error only.

Default MW Traditional Thirttupal - the “real taste”, the new easy way!

Full cream milk - 1 litre

Sugar - 1 cup

If full cream is not availale, use toned milk, but not low fat milk.
Use a big MW casserole to avoid overflowing of milk.
Boil milk in the casserole for

Hi – 10 mts

Medium hi - 30 - 40 mts

This is just an approximate guide.

Make sure you keep on stirring every 10 mts, scraping down the sides with a spatula.ssshhh.

When the mixture has reduced to 1/3 volume, add sugar.

Medium - 10 mts

Medium Lo - 10 mts.

The test is, remove when there is no more liquid part seen in the mixture.

Cool in the casserole itself.

Transfer after atleast 3-4 hrs.
