Karamani is – Cow peas, It is also called black eyed ,red beans or white variety (lobiya).

This is a very delicious sundal.

INGREDIENTS:
  • Beans – 1 cup
  • Jaggery – 1 cup
  • Freshly grated coconut – ½ cup
  • Cardamom powder – ½ tsp
  • Ghee – 2 tsp
PREPARATION METHOD:
  1. Lightly dry roast the beans on a low flame for 5 mts.
  2. Soak in plenty of water for 4-6 hrs.
  3. Wash well & pressure cook till soft.
  4. Drain & add jaggery.
  5. Mix & cook on a low fire till well blended & the mixture is semi-dry.
  6. Add cardamom powder & coconut.
  7. Switch off & add ghee for a nice flavour.
