    Eggless Jam Buns – biscuit like bun-jam combo!

    These can be made, to give children for Navarathri!!

    Maida - 240 grams

    baking powder - 1 tsp

    butter - 90 grams

    Sugar - 120gms

    Milk to mix - 50-60 ml

    Jam

    Sieve flour, baking powder and salt together

    Rub in the fat and add the sugar

    Mix to a stiff dough with milk. Knead lightly and divide into equal sized pieces - 17,18

    Roll them into rounds and make a slight depression in the centre with your thumb

    Add a little jam and place them on a greased baking tray

    Bake at 200 degrees C for 15 minutes.

    Eazy Doughnuts - believe me, they are simply awesome!!

    I have already posted
    Eggless Doughnuts
    These are also eggless, but more easy.

    Maida - 1 cup

    Powdered sugar - 3 tbsp

    Fresh yeast - 2 tsp

    Soft Butter - 1 tbsp

    Salt - a pinch

    Warm milk - ½ cup

    Make a soft batter adding warm milk

    Prove for doubling.

    Roll to ¼ “ thick & cut.
    To make jam doughnuts, cut 2 circles, keep 1 tsp jam on one & press the other on the first sealing the edge with water.

    You can also cut doughrings. Cut out a big circle and cut out the centre with a very small cookie cutter to create a hole in the centre.

    Prove for 20 mts. Keep covered to prevent drying.

    Fry in oil - medium hot first then low for uniform cooking.

    Wait till they are not very hot but less hot.

    Coat in a mixture of cinnamon powder + powdered sugar + 1 tsp cocoa by shaking on thewm when still warm. You can also pour melted chocolate over.

    Banana Loaf - not one, but Two Recipes !

    First Recipe:

    Butter or margarine - 140 gms

    Sugar - 50 gms

    Egg - 1

    Bananas - 3 ( ripe, but not discoloured)

    Maida - 250 gms

    Baking powder - 2 level tsp

    Milk to mix

    Grated rind of 1 lemon

    Cream butter & sugar, beat in egg & well mashed bananas & lemon rind.

    Gradually add sieved flour- baking powder mixture & enough milk to bind.

    Put into a well greased & floured loaf tin.

    Bake at 375 degrees F for 1 hour.

    Dust with icing sugar.

    For a special occasion:

    Cover with cream & sliced bananas just before serving.

    The loaf could be split through the centre & filled with mashed banana & cream.

    Second Recipe:

    Atta (wheat flour) - ¾ cup

    Maida - ¾ cup

    Oil - ½ cup

    Brown sugar - ¾ cup ( or use ordinary sugar)

    Large eggs - 3

    Bananas - 2 (mashed well)

    Baking powder - 2 tsp

    Soda bicarb - ¼ tsp

    Vanilla essence - 1 tsp

    Nutmeg powder & Cinnamon Powder - ½ tsp each (optioonal)

    Chopped walnuts or cashews - 2 tbsp

    Sieve all dry ingredients.

    To mashed bananas add oil & powdered sugar.

    Beat till smooth.

    Add essence & mix.

    Beat eggs in a clean, dry bowl till fluffy.

    Add half of the dry ingredients & half of beaten eggs to banana mixture.

    Mix well & finish adding the other half.

    Add nuts.

    Bake in a greased 7” round cake tin at 180 deg C (350 deg F) for 45 mts or till done.

    Third recipe:
    Eggless Banana-Walnut Bread:

    Mix well
    3 over ripe bananas, mashed

    Refined oil - ¼ cup

    Sugar - 1 cup

    Maida - 2 cups (sifted with 1 tsp baking powder)

    Chopped walnuts - 1 cup

    To a batter. If very thick, add 2-3 tbsp milk. Bake in a loaf-tin at 180 deg C for 1 hour or till done. Cool completely & cut.

    Stuffed & Plaited bread - a Meal in a Dish !

    Bread:

    Maida - 2 cups

    Salt - 1 level tsp

    Sugar - 2 tsp

    Refined oil ( or ghee) - 2 tbsp

    Milk & water - ¼ cup each

    Fresh yeast - 1 tbsp

    Dissolve fresh yeast & sugar in warm mixture of milk & water, mix well, sprinkle a little flour & leave.

    When it starts bubbling add all other ingredients & make a very soft elastic dough & leave to double.

    Filling:

    Paneer - 200 gms, grated

    Oil - 2 tbsp

    Tomatoes - 2, deskinned & finely chopped

    Green chillies - 4,5 finely chopped

    Onion - 1, finely chopped

    Jeera - 1 tsp

    Corinader leaves, finely chopped - 2 tbsp

    Make a filling with the above.

    Heat oil temper jeera. Add onion 7 green chillies.

    Fry & then add chopped tomatoes till dry.

    Add crumbled paneer , salt, garam masala & coriander leaves.

    Remove & cool.

    If you like, some boiled peas may be added.

    Now, follow the photos.

    Roll the bread dough to a rectangle 1 cm thick.

    Divide it into 3 imaginary parts along the wider side.

    Spread the filling on the centre one third.

    Cut 1” wide strips on either side of the filling.

    Overlap the strips on the paneer filling from alternate sides as you would plait your hair.

    Place on a greased tray, sprinkle warm water & allow to rise a little

    after keeping in a covered cup board.

    Brush the top with milk & bake at 450 deg for 12 mts or so till top turns golden brown.

    Serve hot with tomato ketchup.

    Any dry filling can be used.

    Basic White Bread - makes one loaf.

    Warm water - 180-250 ml (3/4 - 1 American cup)

    Active dry yeast - 7 gms (one package of ¼ oz)

    Sugar - 1 tbsp

    Maida/all purpose flour - 680 ml (2 3/4 American cup)

    Skimmed milk powder - 45 ml (3 Tbsp)

    Cold butter, cut into 2 pieces - 30 ml (2 Tbsp)

    Salt - 1 tsp

    Vegetable oil or melted butter or margarine

    Combine 60 ml of water, yeast & sugar. Stir to dissolve yeast and let stand until bubbly, about 5 mtes.

    Fit processor with steel blade. Measure flour, milk powder, butter & salt into work bowl. Process until mixed, about 15 secs.

    Turn on processor ad very slowly drizzle just enough remaining water through feed tube into flour mixture till dough forms a ball that cleans the sides of the bowl. Process until ball turns around bowl about 25 times. Turn off processor & let dough stand for 1-2 mtes.

    Turn on processor & gradually drizzle n enough remaining water to make dough soft, smooth, satiny but not sticky. Process until ball turns around bowl about 15 times.

    Turn dough onto lightly floured surface. Shape into ball and place in lightly greased bowl, turning to grease all sides. Cover loosely with plastic wrap and let it stand in warm place (85 F or 30 C) until doubled – about 1 hour.

    Test thus, if it is proved – insert a finger into the dough. If the indentations remain, the dough has doubled. See the photo.

    Punch down dough. Shape into loaf & place in greased 8.5 * 4.5 * 2.5 inch loaf pan. Brush with oil & let stand in a warm place till doubled – 45-60 mtes.

    Heat oven to 375 F/190 C. Bake until golden and loaf sonds hollow when tapped - 25-30 mtes.

    Remove immediately from pan. Brush crust with oil & cool.

    .Whole Wheat Bread - combination with maida/ all purpose flour

    If the bread is made with 100% whole wheat flour, it has a dense and compact texture. So it is advisable to combine with maida/all purpose flour to give it a relatively light texture & good volume.

    Warm water - 125-180 ml

    Sugar - 2 tbsp (30 ml)

    Active dry yeast - 7 gms (one package of ¼ oz)

    Maida/all purpose flour - 1.5 American cups(375 ml)

    Whole wheat flour - 1 American cup (250 ml)

    Skimmed milk powder - ¼ A cup (60 ml)

    Vegetable oil - 15 ml (1 tbsp)

    Salt - 1 tsp (5 ml)

    Heat the liquid & keep it warm

    Fit FP with steel blade. Add part of the flours, other dry ingredients and dry yeast to work bowl.

    Process on/off a few times to mix.

    Add liquid mixture (reserving alittle) to flour mixture& process until smooth, about 20 secs.

    Turn on the FP & add remaining flour through feed tube so that dough forms a ball that cleans the sides of the bowl.

    Process until ball turns around 25 times.

    Turn off processor & let dough stand for 1-2 mtes.

    Oatmeal-Milk-Whole Wheat Bread(1)

    Milk - 1 American cup (250ml)

    Oatmeal - 1/3 A cup

    Butter - 1 tbsp

    salt - 1 tsp

    Sugar - 1/2 tbsp

    Molasses - 1 1/2 tbsp ( I substituted brown sugar)

    Active Dry yeast - 7 gms

    Whole wheat - 1 cup

    Maida/all purpose flour - 1 cup (about)

    Scald milk, add oats & cook for 1 mte.

    Remove, add butter, salt, sugar, molasses(brown sugar), cool a little.

    Add whole wheat flour, salt & yeast to the FP bowl & add the above mixture.

    Process adding maida till the desired consistency is reached.

    Then proceed as usual.

    This takes a little longer to cook.
