I remember my school days when amma used to get us the vegetable puffs from one and only bakery named "Kumars". We used to order 6 puffs for the 4 of us whenever we used to take a city tour as the bakery was in a convenient location inside the Bus stand and hard to miss. Now when I am married and away from home I miss the veggie puffs when recently i had it at one of our friends place for dinner. I was jaw dropped and wondered how they made it. So i decided to ask the lady of the house for ingredients. She said we get the puff pastry sheets from the grocery store. Since then I made it a part of my tea treats for my husband as well as friends who joined for a gettogether. And I loved the look on their faces when they enjoyed the snack. Now lets get down to the business. I am putting down a quickie recipe to prepare the puffs in 30 mts.

    Ingredients:

1 pack of puff pastry by piperidge farm ( This is available in the dessert aisle of the grocery store)

    2-4 potatoes
    1/2 cup green peas
    1/2 cup onions chopped
    2 green chillies chopped
    1 tsp turmeric
    1 tbsp coriander powder
    1 tsp cumin powder
    1 tsp garam masala
    1 tbsp ginger garlic paste
    1 tbsp oil
    coriander leaves chopped

Let the pastry sheets thaw while you prepare the filling.

Keep the potatoes in the microwave and press the baked potato option and follow the microwave instructions. Microwave the green peas for 5 minutes with a little water to cook it.Heat the oil in the wok , add chilles and add the ginger garlic paste to fry. Add the onions to the wok to fry till golden brown and add all the powders listed and fry for 2 minutes taking care not to burn the masala powders. Once done, add green peas and the mashed baked potatoes and Let it cook for 2 minutes by stirring to mix it well. Add the chopped coriander leaves and 1 tsp lime juice if you like the flavour.

    Baking:

Open the pastry sheets and cut off the extra 3rd side. spread the puff filling on one fold of the two fold sheet and fold over the second. Close the gaps by pinching it together using water as gum if needed. Cut the sheets in your required size preferrably bite sized blocks.

Preheat the oven at 400F. Grease the cookie sheets and place the cut blocks spaced apart not to touch each other while baking. Bake them for 15-20 minuts and keep checking for a brown upper crust. Take out and allow to cool just enough for the crust to become crispy. njoi with tea:coffee
