Recipe with leftover rice

    This is simple and tastes great.

    Ingredients

    Rice
    Cumin seeds 1/2 tb sp
    mustard seeds 1/4 tb sp
    Urad dal - 1 tb sp
    Channa Dal - 2tb sp
    Onion 1
    Chillies 3
    Oil
    Curry leaves
    Turmeric

    Chop onions and chilies.Take a kadai and oil .When it is hot add channa dal, urad dal,cumin seeds,mustard seeds.Add onion ,chilies and turmeric and fry till onion is transparent.Now add rice,salt and mix it well.Take off from the heat after 3 mins.

    This is the exact reciepe that we used to do with leftover rice.

    Can add few veggies like cabbage, capsicum and tomatoes.

    Nice recipe madhurisatya :)
    I got this recipe from a friend recently...Its especially when rice is overcooked like Manmathi mentioned.

    Rice Pakoda :)
    For 1 cup of old rice:
    Besan - 2 spoons
    Green chili - 1 or 2 as per taste - chopped fine
    Salt to taste
    Turmeric - a pinch
    Red chili powder - 1/4 sp (Optional)
    Ginger paste - 1/2 sp
    Garlic paste (optional) - 1/2 sp
    Cumin powder - 1/2 sp
    Coriander leaves - a small bunch - chopped fine
    Onion - 1/2 chopped fine or slit thin length-wise

    Mix all the ingredients together. No water needs to be added, if the rice is too dry, just sprinkle enough water to bind it together. Make small balls and deep fry in oil. They come out super crispy and yummy.

    I guess we can add grated carrots and other finely chopped vegetables too to this to make it like Kofthas for a gravy.

    If the rice is overcooked, you can make curd rice out of it , just add curds at the end to the above given recipe. will taste good.., you can add grated ginger also. hope this helps..:)

    Left over rice can be turned into a good chinese fried rice (that we find in indian restuarants).Heat little oil, add chopped ginger,chopped garlic,chopped green chillies and fry.Add carrots,beans,capsicum and fry.Add salt,ajinomoto,soya sauce and fry.Add left over rice and fry well.Remove and serve hot.You could also add some boiled shredded chicken (from any left over chicken curry) to the abv for chicken fried rice or scrambled egg for egg fried rice.
