Modern Microwave Cooking

    M W Cocktail Payesh - “Desi” version of badham kheer !

    Milk - ½ litre

    Sugar - ½ cup

    Saffron - a tiny pinch ( warm & powder)

    Soak & grind to a paste:

    Almonds - 10 (deskin by soaking in hot water)

    Cashews - 10

    Khus khus - 1 tbsp

    MW milk Hi for 5 mts in a big casserole.

    Add the paste, mix well & MW medium for 5 mts.

    Add sugar, spices & stir very well & MW Hi for 2 mts.

    Chill & use.

    This proportion gives a thin payasam.

    If you prefer it a little thick, add 2 tbsp freshly grated soft coconut to be ground with other ingredients.

    Or you can increase the nuts to get it thick.

    Dear Chitra Madam,
    and all others, I am really thrilled to go through this thread as I got a Microwave gift from my FIL and BIL. It is a LG brand and convection model and as I am yet to receive the piece I really dont know how it functions. But as far as I saw it has two grill tables and a non stick tawa. Will definitely ask u Chitra Madam how to use it when I get the piece in hand. By the way if you dont mind could you pls PM me your phone number and address. So that when I find time I could just drop in to learn more from you.

    Can tempering (thaalidam) be done in microwave cook and serve plastic vessels? I have heard that it leaves ugly stains or sometimes the vessel melts while trying to do so !

    I would'nt advise you to do thalitham separately in the M W. Easier to do on the stove-top.

    Dear Madam

    The problem is, I keep travelling to US on business visits and have to stay in a hotel most of the time. Except 1 or 2, that provide stovetops, most of them offer only a microwave oven ! I am trying to collect recipes that can be made on the microwave alone, with no grinding (no mixie !!) etc. I hate readymade food and prefer cooking my own food, however simple it may be !
