    Everyday Salad 8

    Boiled pasta - ½ cup

    Tomatoes chopped - ½ cuup (after removing pulp)

    Boiled peanuts - ½ cup

    Kiwi fruits - to taste

    Chopped coriander leaves - to taste

    Salt & pepper.

    Toss together & chill.

    Add salt & pepper just before serving.

    Moong sprout-Paneer-Pineapple Salad - almost replaces a meal.

    Paneer cut into small cubes - ½ cup

    Chopped, canned pineapple - ½ cup

    Moong sprouts - 1 cup

    Salt, pepper

    Lime juice - 1 tsp

    Tomato ketchup - 1 tbsp

    Mix all ingredients.

    Serve chilled.

    Fruit Raitha - the most delicious of all raithas!

    This goes very well with bisibela, spicy pulaos & stuffed parathas.
    Any combination of fruits like papaya, mango, apple, pears, banana, pomegranate,
    Orange can be used. Cut into bite sized pieces.

    Mixed fruits - 1 cup

    Thick fresh curds - 1 cup

    Lightly roast & powder:

    Mustard seeds, pepper, jeera - each ¼- ½ tsp

    Red chilli powder - to sprinkle

    Salt

    Mint or coriander leaves - to garnish

    Beat curds with salt & the made powder.

    Mix in fruits & garnish with coriander or mint leaves.

    Sprinkle red chilli powder.

    Serve chilled.

    Broccoli-Carrot Salad - As crispy as colourful !

    I have made the dressing very simple, but this is very delicious too.

    Broccoli flowerettes - 1 cup

    Diced carrots - 1 cup

    Vinegar dressing:

    Olive oil - 3 tsp

    Vinegar - 1 tsp

    Mustard powder - ¼ tsp

    Salt, pepper & sugar

    Bring a large pan of water with ½ tsp salt to boil.

    Add broccoli & carrot one after the other & cook for 2 minutes each.

    Drain & pour cold water over them to keep their natural colour & crispness.

    Mix all the dressing ingredients.

    Spread the salad on a plate & pour over, the dressing.

    Boiled gram dhal ( soft, but grainy & not mushy)

    Green capsicum

    Tomatoes

    Apple slices

    Toss together & chill.

    Add salt & pepper, when serving.

    Sprouts-Ginger-Honey Salad - make a meal out of it !

    Sprouts - 1 cup

    Finely chopped capsicum - ½ cup

    Cucumber 1” pieces - ½ cup

    Tomato - 1 cut into 1” pieces

    Ginger - 2 “, mince & squeeze in a cloth to get juice

    Honey - 1 tsp or to taste

    Pepper & salt

    Steam the sprouts lightly.

    Mix ginger juice with honey, salt &pepper for a dressing.

    Toss all vegetables together & spread the dressing on top.

    Serve chilled.

    Tangy Lettuce Salad - the tanginess is "inviting" !

    I use iceberg lettuce (also called Chinese Cabbage) because it is very crisp.

    For salad:

    Lettuce

    Boiled Peas

    Chopped & (deseeded) tomatoes

    Cubed paneer (or tofu)

    Dressing:

    finely chopped garlic,

    chilli flakes, (good amount of!)

    lime juice,

    chopped coriander (you can use basil), olive oil,

    salt & pepper.

    Exotic Salad (1) - combines fruits & vegetables

    Cut into chunks:

    Pears

    Apples

    Papaya

    Cucumber

    Iceberg lettuce

    Grapes.

    Sprinkle salt & pepper when serving.

    Serve topped with:
    Exotic Dressing:
    Mix 1/2 cup mosumbi juice + 2 tbsp lime juice + 1 tbsp olive oil + 1/2 tsp mustard powder + salt + freshly powdered pepper to taste + 1 tbsp honey (more by option) or 1 tbsp powdered sugar.
