    Mixed Veg. Parota

    1. You can use potato, carrot, beans, onions, bell pepper and green chilies. Avoid green peas. It will obstruct while rolling the parotas. ​
    2. Cook all the vegetables and make like a 'curry' by adding red chili powder, ginger powder, garlic powder and salt. ​
    3. Now make the curry in to small balls and put in the center of a small chapatti and roll it in to a big parota ​
    4. Make tasty parotas by putting them on the tava and pour ghee. ​
    5. Otherwise you can put wheat flour with the curry and mix well.​
    6. Roll it and make parato.​
    7. Serve with Curd.​

    Masala Chappati & Sweet Chappati for Children

    Hi you can make masala chappaties too.
    Here are some varities.
    (Red chilly powder = Fried and powdered red chilly flakes.)

    1. Add red chilly powder in the dough.
    2. Add garlic paste, red chilly powder in the dough.
    3. Add garlic paste, green chilly in the dough.
    4. Add Ommam/Ajwan in the dough.
    5. Add grated Carrot, Onion + red chilly powder in the dough.
    6. Grind fresh coriander leaves with garlic, green chilly and salt. Add this paste in wheat flour and make dough.
    7. You can use Pudina leaves or Curry Leaves instead of coriander leaves amd make chappati.


    FOR CHILDREN YOU CAN MAKE

    1. Add mashed Apple in the flour and make chappati.
    2. Add mashed Banana in the flour and make chappati.
    3. Make chappati with out salt and cut them into small pieces. Put the pieces in a bowl and add hot milk and sugar.
    4. Make chappati with out salt and fold them or roll them by keeping tutty fruity inside.


    Note:

    1. While serving apple chappati and banana chappati serve them with honey.

    2. Keep the left over chappati in the freeer and when you need them MW them and eat.

    3. Or Dry the left over chappati in the MW till they become crispy and keep it in a air tight container and use as snack with tea.

    Chole Pattura

    1 Cup soaked Channa
    2 Potatoes
    2 Onions
    1 inch Ginger piece
    1 spoon mustard seeds
    1 spoon turmeric powder
    1 spoon red chili powder
    1 small lemon size tamarind/1-2 spoons puli paste
    1 spoon Garam Masala
    1 small piece Jaggery
    Salt
    Oil for seasoning
    1/4 spoon baking powder.
    • Put soaked Channa and potato in a pressure cooker and cook them by adding some salt and baking powder.
    • Take cooked Channa, onion and ginger and put them in a mixer grinder and grind them well.​
    • In a pan pour oil and make seasoning with mustard seeds. Add the grinded Masala and fry well.​
    • Add turmeric powder, red chili powder and tamarind water or puli paste.
    • Bring them to a boil and add cooked Channa and potato.​
    • Add salt and allow the Channa to boil for 10 minutes​
    • Put Garam Masala powder and Jaggery mix well.​
    • Remove from the fire and serve with big big 'pattura'.​
    Note: To prepare good crispy pattura add 40% Rava with Maida flour. If you want soft pattura, take 1 cup of curd and add one spoon baking powder or 'soda uppu' and mix well. After that add this mixer with plain Maida flour and mix well and make patturas.

    Puri Varities

    We can make many varieties of Puri. Generally all of us will like puries. We can make more delicious and tasty puries by making small changes. Here are they:

    1. Puri (Soft)
    1. Put wheat flour in a bowl and add salt and mix well​
    2. Without keeping aside make puries immediately.​
    3. Serve with potato masala.​
    2. Kara Puri
    1. Put wheat flour in a bowl and add salt, red chili powder and mix well​
    2. Without keeping aside make puries immediately.​
    3. Serve with 'Raithas' ​
    3. Badam (Almond Puri)
    1. Soak 1 cup of Badam in hot water​
    2. Remove the skin. Grind nicely by adding milk​
    3. Boil another cup of milk and add sugar​
    4. Mix with Badam Paste. Keep aside​
    5. After making Puri, soak the puries in this milk​
    6. Serve these puries decorated with sliced Badam​
    4. Puffed and Crispy Puri​

    While mixing dough for Puri add 40 % Rava to the flour and mix well.​
    1. Add salt and after that pour water and mix​
    2. Keep the dough for 1/2 an hour and then make thick puries​
    3. Put them in hot oil and pour oil on the Puri. Then they will become puffed​
    4. Carefully turn and remove them from the oil.​
    5. This will be as it is for a long time.​
    6. Children will like this. Make big big puries.​

    khuuzz = Moor Kali

    1 Cup wheat flour
    1 Cup Butter Milk
    2 - 4 Red chilies
    Salt
    2 - 4 Table spoon Oil
    Mustard seeds
    Udad dal
    Asafetida
    1. Put wheat flour and butter milk in a bowl and mix well. Add salt.​
    2. It must be a thick batter (Thicker than dosa dough)​
    3. Now pour oil in a pan and make seasoning​
    4. Pour the batter in the pan and stir continuously ​
    5. Let the batter cook well. Remove from the fire and use as evening tiffen.​
    6. You can transfer this Khuzz in a greased plate and make pieces.​
    7. You can use 'parrapu sambar' as side dish for this.​
    Note: You can use Tamarind water instead of butter milk. And instead of red chilies you can use 'moor milakai' i.e. green chilies dried in butter milk.

    Wheat Flour Kesari

    This is a Rajasthani sweet. This will be as tasty as Suji (rava) kesari.

    1 Cup Wheat Flour
    1 1/2 Cup Sugar
    1 1/2 Cup Ghee
    Almond essence few drops
    10 Cashew nuts​
    1. First fry wheat flour in a pan with out putting ghee. ​
    2. Now pour ghee and fry the flour again ​
    3. After pouring ghee the mixture must be like a liquid (That much ghee you must pour) ​
    4. When the flour becomes brown in colour, add 1 cup water in that ​
    5. With in a minute the flour will cook. Add sugar and stir well. ​
    6. When it becomes thick, add fried cashew nuts and almond essence ​
    7. Remove from the fire and use it. ​
    8. Almost it will be like Suji Kesari.​
    9. But becareful while preparing this the flour may become black if you are care less.

    Wheat Flour Savory Chips

    Hi,

    Using wheat flour we can make crispy chips as snacks and we can keep this for many days. We can prepare sweet chips and hot chips.
    First let us see how to prepare hot (savory) chips.

    Take the following ingredients.
    1 Cup Wheat flour
    2 Spoon Red chilly powder
    Salt
    Oil to fry​
    1. Mix the wheat flour as chapatti dough by adding less salt.​
    2. Roll in to chapattis and cut them into small square pieces ​
    3. Pour oil in a deep pan and fry these small square pieces till they become crispy​
    4. Remove from the fire and mix red chilly powder and salt.​
    5. Put them in a air tight box.​
    Note:
    As per your taste you can add masala with the flour like,

    Red chilly powder with the flour,
    Green chilly paste with the flour,
    Ginger garlic paste with the flour,
    Add dry Ommam/ajwan with the flour,
    Coriander and garlic paste with the flour and any masala as per your taste.

    1 Cup Jaggery
    1/2 Spoon Cardamom Powder
    Oil to fry​
    1. Mix wheat flour as chappatti dough without adding salt.​
    2. Roll in to chapattis and cut them into small square pieces ​
    3. Pour oil in a deep pan and fry these small square pieces till they become crispy​
    4. Remove from fire and keep aside.​
    5. Pour one cup water and Jaggery in a pan and make it like thick sticky paste. (Paghu) Add cardamompowder in that.​
    6. Put all the crispy chips in that and mix well to coat uniformly.​
    7. Now sweet chips are ready to taste.​

    2. Roll in to chapattis and cut them into small square pieces ​
    3. Pour oil in a deep pan and fry these small square pieces till they become crispy​
    4. Remove from fire and keep aside.​
    5. Pour one cup water and Sugar in a pan and make it like thick sticky paste. (Paghu) Add cardamompowder in that.​
    6. Put all the crispy chips in that and mix well to coat uniformly.​
    7. Now sweet chips are ready to taste.​

    You can make CARAMAL and put the chips in that. This will be easy than preparing sugar paghu.
