hello ladies, last saturday morning i was thinking abt "what today for break fast".as there is idly or dosa batter at fridge. Dh doesnt like upmas.we are all bored of regular chapathis and pooris no no. so i started searching in kitchen for available resources to invent a new BF item. finally sticked to ragi roti: Ingredients: ragi flour 2cups atta 1cup besan 1cup maida 1/4 cup turmeric, salt, Chillies and corriander paste - 2spoons mix all the ingredents with warm water and mix it well like roti dough.knead well and set it aside for 1 hour. thats all after 1hr roll rotis and fry them on tawa. served with curd. rotis are very soft and tasty.every one liked them at my home. sisters even u can try let me know :thumbsup
substitute maida with wheat and you get equally good ones.. i have even posted a blog post on this.. Ragi Chappathis - Blogs - IndusLadies
It is much healthier without atta and maida....(atta is said to generate more heat...) You can as well add chopped onions and drumstick leaves...My mom makes it this way...i love the flavor of drumstick leaves. I tried making it once without the leaves since its not available here ..but it still turned out good.... If made with only ragi its difficult to roll with a belan..you need to roll it by using hands...
you can make another version of roti or can make as dosa. 1 cup ragi flour 1/2 cup rice flour 1/2 cup ground oats ( roast oats in a pan and grind it coarsely) 1 cup curd Salt onions, green chillies, coriander leaves. Little zeera (cumin seeds) can add any vegetables like shredded spinach, cabbage, carrots, capsicum, methi (fenugreek leaves) Procedure:- Mix all the ingredients like dosa batter , adjust salt as per your taste. Mix the vegetables in the batter. Spread it like dosa , once cooked, turn it to other side. Enjoy them with any chutney or any curry. I usually make it 2 to 3 times in a week. Ragi and oats is really good for health and for diabetes. Regards, DurgaRaj
