Sphagetti-Tomato Bake - Make this with any pasta ! Boiled sphagetti - 2 cups Blanched, peeled & chopped tomatoes - 2 cups White sauce - 1-1 ½ cups ( varies with your desired consistency) Chilli sauce - ½ cup Grated cheese - ½ cup Breadcrumbs - ½ cup Combine the first 4 ingredients in a greased baking dish. Sprinkle bread crumbs & on top of it cheese. Bake at 450 deg till the top starts browning. Serve with a green salad or chips.
Baked Potato Balls in Tomato Gravy - Ideal for Parties. Potato balls: Boiled & mashed potatoes - 1 cup Grated paneer - 1 cup Chat masala - 1-2 tsp Salt Gravy: Bright red tomatoes - 5, 6 Red chilli powder - 1 –2 tsp Salt, Sugar Grated cheese - 3-4 tbsp Potato wafers – to decorate Blanche & blend the tomatoes. Add masalas & salt. Boil till sauce consistency. Blend all ingredients for the balls & deep fry. Drop in tomato gravy & sprinkle grated cheese. Bake at 400 deg F till the cheese melts & starts sizzling. Serve, decorated with potato chips.
Eggless Raisin Cake - a very easy recipe ! Sieve together: Maida - 2 cups Soda bicarb - 1 tsp Cinnamon powder - 1 tsp Salt - a tiny pinch To the above add Butter - ½ cup And mix to breadcrumb consistency. Mix separately Sugar - 1 cup Milk - ½ cup Water - ½ cup Warm slightly to dissolve the sugar. Now add Raisins - 1 cup Mix well & finally add White vinegar - 1 ½ tbsp Do not beat the mixture vigorously, but just fold. Bake in a prehated oven at 400 deg till done. Takes 45 mts - 1 hr. This can be also done in MW oven – hi for about 8 mts.
Flower Biscuits - this recipe is from a Delhi Bakery Maida - 250 gms Ghee - 150 gms Sugar - 150 gms Milk - 70-80 ml Cream ghee & sugar well. Add maida & milk. Knead, cut into shapes. Keep on a greased baking sheet & bake at 375 deg till done.
Eggless Dates Pudding <HR style="COLOR: #ffffff" SIZE=1>Eggless Dates Pudding: 250 gms seedless dates 2 cups water 1 cup sugar 1/2 cup refined oil Mix the above ingredients, heat to boil, simmer for 5 mts. Remove & allow to cool completely. T To the above add 2 cups of maida sifted with 2 level tsp soda. (Optionally add 1 tsp cinnamon powder & 1/2 tsp clove powder at this stage ) Transfer to a baking dish. Sprinkle 2 tbsp chopped cashews (or walnuts ) on top. Bake at 350 degrees F for about 30 mts till done. Serve with ice cream or sweetened whipped cream or chilled custard. You can cook the mixture by microwaving as well.
Tosca Cake - the most favourite cake for everybody ! This is the first cake, I am posting, with eggs - this is because this is a very popular & favourite cake. Maida - 1 cup + 1 tbsp Baking powder - 1 ½ tsp Sugar - 1 cup Melted butter - ½ cup Eggs - 2 Cream or top of milk - ¼ cup Vanilla - 1 tsp Topping: Almonds - 1/3 cup Butter - ¼ cup Sugar - 3 tbsp Cream - 2 tsp Maida - 1 tbsp Blanche & slice almonds. Combine all ingredients with almond essence. Sieve maida with baking powder. Beat eggs, sugar & vanilla together till light & fluffy. Stir in the flour mixture alternately with cream. Stir until well blended. Add melted butter. Butter a cake tin & sprinkle with breadcrumbs. Coat well & spoon the batter into this. Bake in a slow oven at 325 deg F for about 30 mts till done. Remove & top as given below. Top with almond-sugar topping. Return to oven at 375 deg & bake or grill for 5-10 mts till topping is light & bubbling.
Chocolate Cookies - beware, just melts in the mouth ! Self-raising flour - 2 cups Milk powder - ½ cup Powdered sugar - 3 tbsp Soda bicarb - ½ tsp White butter - 1 cup Condensed milk - ¼ cup Dark chocolate (cooking chocolate) - 150 gms Sieve flour, soda, sugar & milk powder. Mix butter & condensed milk & beat till light & fluffy. The consistency should be smooth. Melt the dark chocolate & cool. Mix all ingredients to make a dough. Make balls, flatten & bake in a moderate oven (400 deg F) for 10-12 mts till crisp.
