Hi, Here's a healthy pancake mix recipe. Posted in another thread, but think this is a more suitable thread so reposting it here. I got this off the internet a long while ago...it was from someone's blog, I can't remember so am not able to give credit and reference them. Thanks to that person for sharing in her blog. Recipe: 1 cup plain flour 1 3/4 cup wheat flour 2 cup powdered oat flour / oat bran 1 tablespoon brown sugar 1 1/2 teaspoon baking powder 1/2 tablespoon baking soda 1/2 teaspoon salt - Mix the above mixure and store in a airtight container To make pancake follow this ratio: 1 cup of above mixture to 1 cup of milk My hubby and myself took some time to like this pancake as it was more dense compared to other mixtures. But we have this rather reguarly now. You can have this with maple syrup / honey and fresh cut fruits. Sometimes, I throw some blueberries in the liquid mixture just before cooking it.
